This healthy chocolate pudding recipe offers a creamy, delicious dessert that’s simple to make at home. Using natural sweeteners and Dutch cocoa powder, it’s a guilt-free treat that thickens into a rich, smooth pudding after chilling.

  • Total Time: 15 minutes
  • Yield: 3 servings

Ingredients

Liquid Base

  • 2 cups milk of choice OR canned coconut milk
  • 1/2 cup milk of choice (for cornstarch mixture)

Dry Ingredients

  • Heaping 1/8 tsp salt
  • 1/4 cup Dutch cocoa powder
  • 3 tbsp cornstarch

Sweeteners and Flavorings

  • 1/3 cup sweetener (sugar, pure maple syrup, erythritol, or honey)
  • 3/4 tsp pure vanilla extract

Optional

  • 3 oz chocolate chips or broken-up chocolate bar pieces

Instructions

  1. Heat Milk and Cocoa: Pour 2 cups of your chosen milk or canned coconut milk into a saucepan. Add the heaping 1/8 tsp of salt, 1/4 cup Dutch cocoa powder, and 1/3 cup sweetener (such as sugar, pure maple syrup, erythritol, or honey). Heat this mixture gently over medium heat, stirring to combine and dissolve the ingredients.
  2. Mix Cornstarch Slurry: While the milk mixture is warming, whisk together 3 tbsp cornstarch with 1/2 cup of milk in a small bowl until fully dissolved with no lumps.
  3. Add Cornstarch Mixture and Boil: Once the milk mixture is warm, slowly add the cornstarch slurry into the saucepan. Increase the heat and bring the mixture to a boil. Once it boils, stir continuously for 2 minutes to allow the pudding to thicken properly.
  4. Simmer and Finish Cooking: Reduce the heat to low and simmer gently for an additional 1 minute, still stirring to prevent burning. Then turn off the heat.
  5. Add Vanilla and Chocolate: Stir in 3/4 tsp pure vanilla extract. While the pudding is still hot, add the optional 3 oz of chocolate chips or broken-up chocolate pieces and stir until melted and fully combined.
  6. Chill Pudding: Transfer the pudding into serving containers and refrigerate to let it thicken fully. The pudding will continue to firm up as it cools and will be ready to serve after a few hours or overnight for best texture.

Notes

  • Only Dutch cocoa powder was tested in this recipe; regular unsweetened cocoa powder may alter flavor.
  • Arrowroot powder was not tested as a cornstarch substitute, so results may vary if substituted.
  • You can customize the sweetener according to your dietary preferences or needs.
  • For best results, allow pudding to chill for several hours or overnight.
  • Use a whisk throughout to avoid lumps and ensure smooth pudding.
