Ingredients
Dry Ingredients
- 2 ½ cups gluten-free all-purpose flour (312 grams)
- 2 tablespoons ground chia seeds
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon baking powder
- 1 teaspoon salt
Wet Ingredients
- 4 large eggs
- 1 ¼ cups plain Greek yogurt (330 grams)
Additional Ingredients
- 1 ½ cups shredded cheddar cheese
- 1 cup fresh spinach, roughly chopped
- 3 tablespoons fresh chives, chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking.
- Mix Dry Ingredients: In a large mixing bowl, combine the gluten-free flour, baking powder, garlic powder, dried oregano, ground chia seeds, and salt. Stir thoroughly to evenly distribute the ingredients.
- Whisk Wet Ingredients: In a separate bowl, whisk together the eggs and plain Greek yogurt until the mixture is smooth and uniform.
- Combine Wet and Dry Ingredients: Gradually add the wet mixture into the dry ingredients, mixing gently until just combined. Carefully fold in the chopped fresh spinach, chopped chives, and all but ¼ cup of the shredded cheddar cheese.
- Shape Biscuits: Using a scoop or spoon, portion about ¼ cup of dough per biscuit. Roll each portion into a ball, place them on the prepared baking sheet, and lightly flatten each biscuit. Sprinkle the reserved cheddar cheese on top of each biscuit.
- Bake: Bake the biscuits at 400°F (200°C) for 5 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 15-20 minutes until the biscuits turn a golden brown color and are cooked through.
- Serve: Enjoy these warm biscuits fresh from the oven, ideally paired with fruit or a smoothie for a balanced and nutritious breakfast or snack.
Notes
- For best results, use a gluten-free all-purpose flour blend that contains xanthan gum or another binder to help with texture.
- The ground chia seeds add extra protein and fiber, but can be substituted with flaxseeds if preferred.
- Be careful not to overmix the dough to keep the biscuits flaky.
- These biscuits freeze well; store in an airtight container and reheat in the oven before serving.
- The recipe yields 6-8 biscuits depending on size.
