Ingredients
Wet Ingredients
- 1 cup pumpkin puree
- 1 banana, mashed
- 1/4 cup unsweetened applesauce
- 1/4 cup nonfat milk (or nut milk)
- 3 tbsp. honey
- 3 tbsp. maple syrup
- 2 tbsp. coconut oil, melted
- 2 eggs
- 1 tsp vanilla extract
Dry Ingredients
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp salt
- 1.75 cups white whole wheat flour
Add-ins
- 1/2 cup chocolate chips
Instructions
- Mix wet ingredients. In a large bowl, stir together the pumpkin puree, mashed banana, unsweetened applesauce, nonfat milk, honey, maple syrup, melted coconut oil, and eggs until thoroughly combined.
- Add spices and leavening. To the wet mixture, add pumpkin pie spice, vanilla extract, baking soda, and salt. Stir well to incorporate all the ingredients evenly.
- Incorporate dry ingredients. Gradually add the white whole wheat flour to the wet mixture, stirring gently with a spoon. The batter should be mixed enough to remove large lumps but does not have to be perfectly smooth.
- Fold in chocolate chips. Fold in most of the chocolate chips, reserving a few to sprinkle on top of the batter before baking.
- Prepare the baking pan. Lightly grease a 9 x 5-inch bread pan with cooking spray or line it with parchment paper for easy removal.
- Pour batter into pan. Transfer the prepared batter into the bread pan, spreading it evenly. Sprinkle the reserved chocolate chips on top for an attractive finish.
- Bake the bread. Preheat your oven to 350°F (175°C). Place the pan on the middle rack and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool before serving. Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. This prevents sogginess and helps slices hold their shape.
Notes
- You can substitute nonfat milk with your favorite nut milk to make it dairy-free.
- For an extra touch, try adding chopped nuts like walnuts or pecans along with the chocolate chips.
- Ensure not to overmix the batter to keep the bread light and tender.
- Store leftover bread in an airtight container at room temperature for up to 3 days or freeze for longer storage.
- If you prefer a sweeter bread, feel free to increase the honey or maple syrup slightly.
