Ingredients
Whipped Cottage Cheese
- 1 (16 ounce) container low-fat cottage cheese (Good Culture recommended)
- 1 garlic clove, sliced or roughly chopped
- 1 small lemon, zested
- ¾ cup Chicago-Style mild or hot giardiniera, drained but not rinsed
For Topping
- Extra ¼ cup giardiniera including its oil (do not drain)
- Optional: Fresh grated parmesan cheese
- Chopped fresh parsley or green onion
Instructions
- Blend Cottage Cheese and Aromatics: In the bowl of a food processor or high-powered blender, combine the low-fat cottage cheese, sliced garlic clove, and lemon zest. Blend on high for 30 seconds to 1 minute, stopping occasionally to scrape down the sides with a spatula or blender tamper to ensure an even, smooth texture.
- Add Giardiniera and Blend Again: Add the drained giardiniera to the blended cottage cheese mixture and pulse or blend on high for another 30 seconds until the mixture is well combined and creamy with visible bits of giardiniera.
- Transfer and Top: Spoon the dip into a shallow serving bowl. Top with an additional ¼ cup of giardiniera along with its oil to add extra flavor and moisture. Sprinkle fresh chopped parsley or green onions on top and add grated parmesan cheese if desired for a cheesy finish.
- Serve and Enjoy: Serve the dip immediately with your favorite crackers such as Simple Mills or Triscuits, fresh cut vegetables, pita chips, or use it as a spread on sandwiches or toasted sourdough. It also pairs excellently as a dip for quesadillas or alongside roasted or grilled chicken and steak.
Notes
- Be sure not to rinse the giardiniera after draining to keep the flavorful oil and spices.
- Use fresh lemon zest for the best citrus brightness in the dip.
- Adjust the amount of giardiniera according to your desired heat level—mild to hot is recommended.
- This dip can be prepared ahead and stored in the refrigerator for up to 2 days for convenience.
- For a vegan option, substitute cottage cheese with a high-protein plant-based alternative.
