Ingredients
Dough
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon sea salt
- 2 cups plain Greek yogurt or blended cottage cheese
Filling
- ½ cup pizza sauce
- ½ cup mini pepperoni
- 8 oz. mozzarella log, cut into chunks
- 1 green pepper, minced
- ⅓ cup sliced black olives
Other
- 1 large egg
- 4 tablespoons shredded parmesan cheese
- 1 tablespoon Italian seasoning
Instructions
- Preheat Oven: Preheat the oven to 425℉ to ensure it reaches the ideal temperature for baking the hot pockets perfectly golden and crisp.
- Make Dough: In a large bowl, combine the flour, baking powder, salt, and Greek yogurt using a silicone or wooden spoon until just combined. Then knead the mixture with your hands until it forms a cohesive ball.
- Prepare Dough Portions: Transfer the dough to a floured surface, cut it in half, and place one half back into the bowl to keep it covered and moist while you work with the other half.
- Roll and Cut Dough: Roll out one dough half into a 12×8 inch rectangle and cut this into 4 equal squares, which will serve as the base for your hot pockets.
- Fill Hot Pockets: Evenly distribute pizza sauce, mini pepperoni, mozzarella chunks, minced green pepper, and sliced black olives onto each dough square. Fold and pinch the edges securely to close each pocket.
- Arrange and Repeat: Place each assembled hot pocket seam side down on a parchment-lined baking sheet. Repeat the rolling, cutting, and filling process with the second half of the dough.
- Add Toppings and Egg Wash: Cut a small slit on top of each hot pocket for steam release. Brush with the beaten egg wash, then sprinkle shredded parmesan cheese and Italian seasoning over the top to enhance flavor and browning.
- Bake: Bake the hot pockets at 425℉ for 10-12 minutes until they turn golden brown and bubbly.
- Cool and Serve: Remove from the oven and let the hot pockets cool for 5 minutes before serving to allow the filling to set.
Notes
- Using Greek yogurt in the dough not only boosts protein content but also keeps the pockets tender and moist.
- For a vegetarian option, omit the pepperoni and substitute with mushrooms or extra vegetables.
- You can store leftover hot pockets in an airtight container in the refrigerator for up to 3 days and reheat them in the oven for best results.
- Ensure edges are tightly sealed to prevent filling from leaking during baking.
- Customize the filling to your favorite pizza toppings as desired.
