Ingredients
Sweet Potatoes
- 4 medium sweet potatoes
Chicken and Sauce
- 2 medium chicken breasts (about 1/2 lb)
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 1-1/2 cups chicken broth
- 1/2 cup barbecue sauce (or more to taste)
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika (or regular paprika)
Toppings
- 1/2 cup shredded cheddar cheese
- Diced red onion
- Minced fresh cilantro
- Pickled jalapenos
Instructions
- Roast Sweet Potatoes: Preheat your oven to 400°F (204°C). Place the sweet potatoes on a large baking sheet and prick them several times with a fork to allow steam to escape during baking. Bake the sweet potatoes for 40-45 minutes or until they are tender when pierced with a fork.
- Cook the Chicken: While the sweet potatoes are roasting, pat the chicken breasts dry with paper towels and season both sides with salt and pepper. Heat the vegetable oil in a medium skillet over medium-high heat. Add the chicken breasts and sear them until golden brown on both sides.
- Simmer the Chicken: Reduce the heat to medium and pour the chicken broth into the skillet. Cover the pan and let the chicken simmer in the broth for about 20 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.
- Shred Chicken: Remove the chicken breasts from the skillet and place them in a large bowl. Add 2 tablespoons of the cooking broth from the pan to keep the chicken moist. Use two forks to shred the chicken finely.
- Mix with Barbecue Sauce: Add the barbecue sauce, chili powder, and smoked paprika to the shredded chicken. Stir well to combine, adding more barbecue sauce if you prefer a saucier filling. Keep the mixture warm while you prepare the sweet potatoes.
- Fill Sweet Potatoes: When the sweet potatoes are done, remove them from the oven. Use a fork and knife to carefully split each sweet potato open and fluff the flesh inside to create a cavity for the filling.
- Stuff and Top: Spoon the barbecue chicken mixture evenly into each sweet potato, then sprinkle the shredded cheddar cheese on top.
- Broil to Melt Cheese: Place the stuffed sweet potatoes under the oven broiler on high heat for 2-3 minutes, or until the cheddar cheese is melted and slightly browned.
- Add Final Toppings and Serve: Remove the sweet potatoes from the oven and garnish with diced red onion, minced fresh cilantro, and pickled jalapenos. Serve immediately while hot and enjoy this flavorful and filling meal.
