This Homemade Chicken Spaghetti recipe is a comforting and cheesy casserole perfect for family dinners. Tender cooked chicken is combined with angel hair pasta cooked in chicken broth, sautéed bell peppers and onions, creamy soup, and plenty of cheddar cheese, then baked until golden and bubbly. It’s an easy, hearty dish that serves up to 10 people.

  • Total Time: 1 hour
  • Yield: 10 servings

Ingredients

Chicken and Pasta

  • 4 cups cooked chicken, shredded or diced
  • 1 pound angel hair spaghetti
  • 4 cups chicken broth (used to cook pasta and added to casserole)

Vegetables

  • 1 bell pepper, diced
  • 1 onion, diced

Dairy and Canned Goods

  • 2 1/2 cups cheddar cheese, divided
  • 2 cans cream of chicken soup

Seasoning

  • 1 teaspoon seasoned salt
  • Salt and pepper, to taste

Instructions

  1. Preheat and Cook Pasta: Preheat your oven to 350 degrees F. Cook the angel hair spaghetti according to package instructions, but use chicken broth instead of water for extra flavor. Reserve some of the pasta cooking broth for the casserole mixture.
  2. Sauté Vegetables: While the pasta cooks, heat a skillet over medium heat and sauté the diced onion and bell pepper until softened and fragrant, about 5-7 minutes.
  3. Combine Ingredients: In a 9×13 inch casserole dish, mix together the cooked chicken, cooked spaghetti, sautéed bell pepper and onion, seasoned salt, cream of chicken soup, and 1 1/2 cups of cheddar cheese. Gradually stir in 1 to 2 cups of the reserved pasta broth until the mixture is well combined but not soupy. Season with salt and pepper to taste.
  4. Bake: Place the casserole in the preheated oven and bake for 45 minutes, or until the dish is bubbly and heated through.
  5. Add Cheese Topping: Remove the casserole from the oven and sprinkle the remaining 1 cup of cheddar cheese evenly over the top. Return to the oven for a few minutes until the cheese melts and is slightly golden.
  6. Serve: Let the casserole rest for a few minutes before serving. Enjoy warm.

Notes

  • Using chicken broth to cook the pasta adds extra depth of flavor compared to plain water.
  • Sautéing the vegetables beforehand ensures they are fully cooked and tender in the casserole.
  • You can substitute cream of mushroom soup if preferred or for a slightly different flavor.
  • Leftovers can be stored in the refrigerator for 3-4 days and reheated in the oven or microwave.
  • For a lower fat version, use reduced-fat cheddar cheese and lower sodium soup and broth.
