This Homemade Fiesta Lime Chicken is a vibrant, flavor-packed dish featuring juicy lime-marinated chicken breasts cooked to perfection on the stovetop or grill. Topped with a fresh, zesty avocado corn salsa, this recipe combines smoky spices with bright citrus and creamy avocado for a deliciously satisfying meal that’s quick and easy to prepare.

  • Total Time: 25 minutes (excluding marinating time)
  • Yield: 4 servings

Ingredients

Chicken Rub

  • 1 pound chicken breasts, pounded to an even thickness
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (about 1 lime)
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon chipotle chili powder (optional for more heat)
  • 1/4 teaspoon pepper

Avocado Corn Salsa

  • 2 medium avocados, ripe but firm, chopped
  • 1 cup cherry tomatoes, quartered (or 2 Roma tomatoes, seeded and chopped)
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced, seeds separated
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 teaspoon garlic powder)
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper (or more to taste)

Instructions

  1. Prepare the Chicken Rub: In a small bowl, whisk together all chicken rub ingredients including olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion and garlic powders, chipotle chili powder, and pepper. This mixture will coat and flavor the chicken thoroughly.
  2. Coat the Chicken: Using a brush or by dipping, evenly massage the rub all over the chicken breasts. Ensure every part is well covered for the best flavor infusion.
  3. Marinate: If possible, let the coated chicken rest at room temperature for 30 minutes, or refrigerate for up to 8 hours for deeper flavor. Before cooking, bring chicken back to room temperature if chilled.
  4. Cook Stovetop: Heat a greased indoor grill pan or skillet over medium-high heat until very hot. Place the chicken and cook undisturbed for 3-5 minutes to develop a nice browned or blackened crust on one side.
  5. Finish Cooking: Flip the chicken, cover the pan, reduce heat to medium, and cook for another 5-7 minutes depending on thickness, until the internal temperature reaches 160°F.
  6. Rest the Chicken: Transfer the chicken to a cutting board and allow it to rest for 5 minutes to retain juices before slicing.
  7. Alternative Grilling Method: Preheat a grill to medium heat (375-450°F). Grease the grill grates and grill chicken for 5-7 minutes per side until internal temperature reaches 160°F. Rest for 5 minutes before slicing.
  8. Prepare Avocado Corn Salsa: Combine all salsa ingredients except avocados in a large bowl, cover, and chill from 30 minutes up to 24 hours to allow flavors to meld.
  9. Finish Salsa: Just before serving, gently fold in the chopped avocados. Adjust seasoning with additional salt, pepper, and jalapeno seeds to desired heat.
  10. Serve: Slice the rested chicken and top with the prepared avocado corn salsa. Garnish with extra fresh lime juice if desired for a bright finish.

Notes

  • Marinating time enhances flavor but is optional if you’re short on time.
  • Cooking times vary depending on chicken breast thickness; use a meat thermometer for best results.
  • Chipotle chili powder is optional and adds smoky heat; adjust based on spice preference.
  • Avocado corn salsa can be made ahead and stored in the fridge for up to 24 hours before adding avocado.
  • Ensure not to overcook chicken to retain juiciness; 160°F internal temperature is ideal.
