A quick and flavorful recipe for tender homemade garlic butter steak bites, perfect for a delicious weeknight meal. Juicy sirloin or ribeye steak cubes are seared to perfection and tossed in a rich garlic butter sauce with herbs, making them irresistibly savory and satisfying.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Steak Bites

  • 1 lb Sirloin or Ribeye Steak (cut into bite-sized cubes)
  • 2 tbsp Olive Oil (If carnivore, swap for beef tallow, ghee, or lard)
  • Salt and Black Pepper (to taste)

Garlic Butter Sauce

  • 4 tbsp Butter (unsalted)
  • 4 cloves Garlic (minced; skip if carnivore)
  • 1 tsp Dried Thyme (skip if carnivore)
  • Fresh Parsley (chopped, to garnish; skip if carnivore)

Carnivore Butter Sauce Optional Additions

  • 1 tbsp Warm Bone Broth (optional, for extra umami)

Instructions

  1. Pat and Season the Steak: Thoroughly dry the steak cubes using paper towels to ensure a proper sear. Season generously with salt and black pepper on all sides.
  2. Heat the Skillet: Place a large skillet over medium-high heat and add olive oil (or beef tallow/ghee/lard for a carnivore version).
  3. Sear the Steak Bites: Add the steak cubes in a single layer without overcrowding. Sear for 1-2 minutes on each side until they develop a brown crust. Cook in batches if necessary to avoid steaming.
  4. Set Aside Steak: Remove the cooked steak bites from the skillet and keep them warm on a plate.
  5. Melt Butter for Sauce: Using the same skillet, lower the heat to medium and melt the butter to capture all the browned bits left from searing.
  6. Sauté Garlic: Add minced garlic to the melted butter and sauté for approximately 1 minute until fragrant but not browned.
  7. Add Thyme: Stir in the dried thyme and cook for an additional 10 seconds to release its aroma.
  8. Coat Steak in Sauce: Return the seared steak bites to the skillet, tossing them thoroughly to coat evenly with the garlic butter mixture.
  9. Serve and Garnish: Transfer the steak bites to a serving plate, drizzle any remaining garlic butter sauce from the pan, and garnish with freshly chopped parsley.
  10. For Carnivore Butter Sauce (Optional): After removing steak bites, melt butter, ghee, or beef tallow in the skillet over medium heat. Optionally, stir in 1 tablespoon of warm bone broth, scraping the skillet to create a flavorful meat glaze. Return steak to the pan to coat in the glaze and serve immediately.

Notes

  • Patting the steak dry is essential to achieve a good sear and caramelization.
  • Do not overcrowd the pan; cook steak bites in batches for best results.
  • If making the carnivore version, omit garlic, thyme, and parsley to keep it strictly carnivore-friendly.
  • The optional bone broth in the carnivore butter sauce adds a delicious umami boost but can be skipped.
  • Use unsalted butter to better control the saltiness of the dish.
  • Serve steak bites immediately for optimal juiciness and flavor.
