  • Total Time: 1 hour 30 minutes
  • Yield: 4 servings

Ingredients

Chimichurri Sauce

  • 1 cup firmly packed fresh flat-leaf parsley leaves (finely minced)
  • 2 tablespoons fresh oregano leaves (finely minced)
  • 2 garlic cloves (finely minced)
  • 1 small shallot (finely minced)
  • 1 small serrano chili (optional, seeds removed and finely minced)
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup extra virgin olive oil

Chicken

  • 2 lbs. boneless skinless chicken thighs

Instructions

  1. Combine Chimichurri Ingredients: In a small bowl, add the finely minced parsley, oregano, garlic, shallot, and optional serrano chili. Add red wine vinegar, sea salt, and freshly ground black pepper. Stir the mixture thoroughly while slowly drizzling in the extra virgin olive oil until well combined. Taste and adjust the seasoning by adding more salt or vinegar if needed.
  2. Marinate Chicken: Place the boneless skinless chicken thighs in a large bowl or resealable plastic bag. Pour half of the prepared chimichurri sauce over the chicken, ensuring all pieces are well coated. Cover and let marinate in the refrigerator for at least 1 hour or preferably overnight for maximum flavor infusion.
  3. Preheat Grill: Preheat your grill or grill pan over medium-high heat to ensure it is hot enough for grilling the chicken properly.
  4. Grill Chicken: Once the grill is hot, place the marinated chicken thighs directly on the grill. Cook each side for 5 to 7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with nice grill marks.
  5. Rest Chicken: Remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute, ensuring tender, juicy meat.
  6. Serve: Serve the grilled chicken warm, accompanied by the remaining chimichurri sauce on the side along with your choice of side dishes such as rice, salad, or grilled vegetables.

Notes

  • Fresh oregano leaves provide the best flavor; if unavailable, dried oregano can be substituted but use about one-third the amount.
  • Using boneless skinless chicken thighs ensures juiciness and quick cooking, but chicken breasts can be substituted if preferred.
  • The serrano chili is optional for a mild heat; adjust or omit according to your spice preference.
  • Marinating overnight enhances flavor but a minimum of 1 hour is sufficient.
  • Ensure the grill is preheated properly for even cooking and attractive grill marks.
