Ingredients
Chicken
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 tablespoon avocado oil
Sauce
- 1/4 cup coconut aminos
- 1 tablespoon honey
- 1 tablespoon toasted sesame oil
- 1/2 teaspoon ground ginger
- 1 tablespoon garlic cloves, minced
- 2 tablespoons rice vinegar
- 1/4 teaspoon black pepper
- 1 teaspoon lime zest (from one lime)
- 1 tablespoon lime juice (from one lime)
Garnish and Sides
- 1 tablespoon sesame seeds (for garnish)
- 2 cups cooked green beans
- 1 cup cooked white rice
Instructions
- Prep the Chicken and Sides: Cut the boneless, skinless chicken breasts into 1-inch cubes. Prepare the white rice and green beans according to package directions and set aside.
- Sauté the Chicken: Heat 1/2 tablespoon of avocado oil in a pan over medium-high heat for about 1 minute. Add the cubed chicken to the pan and sauté, turning occasionally, until all sides are browned and the chicken is cooked through, approximately 10-12 minutes.
- Make the Sauce: While the chicken is cooking, whisk together the coconut aminos, honey, toasted sesame oil, ground ginger, minced garlic, rice vinegar, black pepper, lime zest, and lime juice in a bowl until well combined.
- Remove Chicken: Once the chicken is fully cooked, remove it from the pan and set it aside on a plate.
- Cook the Sauce: Pour the prepared sauce mixture into the same hot pan without cleaning it. Cook over medium-high heat for 3-5 minutes, stirring constantly, until the sauce begins to bubble and thickens. Watch carefully to prevent burning.
- Combine Chicken and Sauce: Return the cooked chicken back into the pan with the thickened sauce. Stir well to coat all pieces evenly in the sauce.
- Serve: Serve the sesame chicken over the cooked white rice alongside the green beans. Garnish with 1 tablespoon of toasted sesame seeds for an extra nutty flavor and appealing presentation.
Notes
- For a lower-carb option, substitute white rice with cauliflower rice.
- Adjust honey quantity based on your preferred sweetness level.
- Use fresh lime juice for the best flavor, but bottled lime juice can serve as a substitute in a pinch.
- Ensure to watch the sauce closely while cooking to avoid burning as it thickens quickly.
