Ingredients
Beans
- 2 cups (14 oz) dried Navy beans (Haricot) or other white beans
- OR 3 x 400g/14oz cans haricot/navy beans, cannellini or any white beans, drained
Liquid and Sauce
- 2 cups chicken stock/broth, low sodium, or homemade vegetable stock
- 1 cup water
- 2 tsp Worcestershire sauce
- 6 tbsp ketchup or Aussie/British tomato sauce
- 2 tbsp tomato paste
- 3 tbsp brown sugar
- 1 tbsp apple cider vinegar
Seasonings
- 1/2 tsp garlic powder (or more onion powder)
- 1/2 tsp onion powder (or more garlic powder)
- 1/2 tsp black pepper
- 1 tsp salt
Thickener
- 8 tsp cornflour/cornstarch
- 1/4 cup water
Instructions
- Soak the Beans: Place dried Navy beans in a large bowl and cover with plenty of water. Soak for 8 to 24 hours, then drain the beans completely.
- Cook the Beans: Transfer soaked beans to a large pot and cover with fresh water. Bring to a simmer over high heat and skim off any foam that forms. Reduce heat to medium-low, partially cover the pot leaving a small gap for steam to escape, and gently simmer for 1 to 1.5 hours until beans are just tender but still slightly firm inside. Start checking tenderness at 45 minutes. Drain cooked beans and set aside.
- Prepare the Sauce: In the same or a separate large pot, combine chicken or vegetable stock, water, Worcestershire sauce, ketchup, tomato paste, brown sugar, apple cider vinegar, garlic powder, onion powder, black pepper, and salt. Stir well to blend all sauce ingredients.
- Add Beans and Simmer: Add the drained cooked or canned beans into the sauce mixture. Bring the pot to a simmer over medium heat, then reduce heat to medium-low and cook uncovered for about 20 minutes. Stir occasionally to prevent sticking and allow flavors to meld.
- Thicken the Sauce: Mix cornflour with water to create a slurry. Slowly pour this into the simmering beans while stirring constantly. Continue to cook for 2 minutes until the sauce thickens noticeably.
- Adjust Seasoning: Taste the baked beans and add more salt if desired to suit your palate.
- Serve: Traditionally, serve the baked beans hot by spooning them over buttered toast. Alternatively, ladle into bowls and enjoy with a spoon, dunking in crusty artisan bread, Irish soda bread, or no yeast sandwich bread for a comforting meal.
Notes
- If using canned beans, skip soaking and cooking the dried beans; start directly at the sauce preparation step.
- Low sodium broth is recommended to control saltiness.
- Ketchup can be substituted with Aussie or British tomato sauce for authentic flavor.
- The sauce thickens quickly once cornflour is added—watch carefully.
- Popular bread choices include artisan crusty bread, Irish soda bread, or no yeast sandwich bread for dipping and serving.
