Ingredients
Shrimp and Seasoning
- 18 small to medium sized shrimp
- 1/2 teaspoon chili powder
- 2 teaspoons olive oil
Assembly
- 3/4 cup guacamole (store bought or homemade)
- 18 Lay’s Classic potato chips
- Optional garnish: chopped cilantro
Instructions
- Prepare the shrimp: Heat the olive oil in a large pan over high heat. Sprinkle the chili powder evenly over the shrimp to season them.
- Cook the shrimp: Place the seasoned shrimp in the hot pan and cook, stirring occasionally, for 2-3 minutes or until the shrimp turn pink and opaque, indicating they are fully cooked.
- Assemble the bites: Arrange 18 Lay’s Classic potato chips on a serving platter. Spoon approximately 2 teaspoons of guacamole onto each chip, then place one cooked shrimp on top of each guacamole-topped chip.
- Garnish and serve: Optionally sprinkle chopped cilantro over the shrimp bites for added freshness and serve immediately to enjoy their crispy and flavorful goodness.
Notes
- Make sure not to overcook the shrimp to keep them tender and juicy.
- You can make your own guacamole or use a good-quality store-bought variety.
- For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the shrimp before cooking.
- Serve these shrimp bites immediately to maintain the crispiness of the chips.
- This appetizer is perfect for parties and can be doubled or tripled easily for larger gatherings.
