Ingredients
Cheese and Cream Base
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup cottage cheese
- 4 ounces cream cheese, softened
- ½ cup sour cream
- 1½ teaspoons herb and garlic seasoning
Vegetables
- 2 stalks green onions, sliced (white and green parts separated)
Protein
- 4 cups cooked chicken, chopped or shredded
Topping
- 24 buttery crackers (such as Ritz), crushed
- ¾ cup shredded sharp cheddar cheese
- 2 tablespoons butter, melted
Instructions
- Preheat Oven: Set your oven to 350℉ (175℃) to warm up while you prepare the casserole ingredients.
- Mix Cheese Base: In a large mixing bowl, combine the condensed cream of chicken soup, cottage cheese, softened cream cheese, sour cream, the white parts of the green onions, and herb and garlic seasoning. Stir well until the mixture is smooth and uniform.
- Add Chicken: Fold the cooked chicken into the cheese mixture ensuring it is evenly distributed. Then, spread this mixture into a 2-quart baking dish, creating an even layer.
- Prepare Topping: Place the buttery crackers in a large zip-top bag and crush them thoroughly with a rolling pin until they become small pieces. Transfer the crushed crackers to a bowl.
- Combine Topping Ingredients: Add the shredded sharp cheddar cheese and melted butter to the crushed crackers. Toss everything together until the crackers are well coated with butter and cheese.
- Assemble Casserole: Spread the cracker topping evenly over the chicken mixture in the baking dish.
- Bake: Place the dish in the preheated oven and bake for 35 minutes or until the casserole is bubbly and the cracker topping has turned a golden brown color.
- Garnish and Serve: Once baked, sprinkle the tops of the green onions (green parts) over the casserole for a fresh garnish. Serve warm and enjoy!
Notes
- For best results, use freshly cooked chicken from roasted or boiled chicken breasts or thighs.
- The herb and garlic seasoning can be substituted with garlic powder and mixed dried herbs if unavailable.
- Crushing the crackers inside a sealed bag helps with easy cleanup.
- This casserole can be prepared a day ahead, assembled, covered, and refrigerated before baking.
- When baking, place the casserole on the middle rack for even heat distribution and to prevent burning the topping.
