Ingredients
Shrimp Marinade
- 2 lb large raw shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 packet (or 2 tbsp) fajita seasoning
- 1 garlic clove, pressed
- Juice of 1 lime
Vegetables & Cooking
- 2 tbsp olive oil
- 1 yellow onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
To Serve
- Warm flour tortillas
- Sour cream (optional)
Instructions
- Marinate the Shrimp: In a bowl, combine the shrimp with 2 tablespoons olive oil, fajita seasoning, pressed garlic clove, and lime juice. Mix thoroughly to coat all shrimp. You can cook immediately or let marinate for up to a few hours to enhance flavor.
- Cook the Shrimp: Heat a large pan over medium-high heat. Add the marinated shrimp and sauté until pink and opaque, about 3-4 minutes. Remove cooked shrimp from the pan and set aside.
- Sauté Onions: In the same pan, add remaining 2 tablespoons olive oil and cook sliced yellow onion over medium heat for 4-5 minutes until soft and translucent.
- Cook Peppers: Increase heat to high and add sliced red and green bell peppers. Stir-fry for 3-4 minutes until crisp-tender, making sure vegetables remain vibrant and slightly crunchy.
- Combine Shrimp and Vegetables: Return the cooked shrimp to the pan with the peppers and onions. Stir and cook together for about 1 minute to marry flavors.
- Serve: Spoon the shrimp and vegetable mixture into warm flour tortillas. Add a dollop of sour cream if desired and enjoy immediately.
Notes
- You can marinate the shrimp up to 2 hours in advance for deeper flavor.
- Use other bell pepper colors like yellow or orange for extra color and sweetness.
- For a low-carb version, serve fajitas over lettuce wraps instead of tortillas.
- Adjust fajita seasoning quantity according to spice preference.
- Ensure shrimp is peeled and deveined for best texture and eating experience.
