Ingredients
Ingredients
- 10 medium apples, quartered
- ½ cup (100 g) light brown sugar, packed
- 4 sticks cinnamon
- 1 tablespoon ground allspice
Instructions
- Prepare the apples: Place the quartered apples in a large stockpot and add enough water to cover the apples by about 2 inches when submerged, pressing them down as apples tend to float.
- Add spices and sugar: Stir in the light brown sugar, cinnamon sticks, and ground allspice into the pot with the apples and water.
- Boil the mixture: Bring the mixture to a vigorous boil uncovered and let it boil for 1 hour to extract flavors from the apples and spices.
- Simmer and cook: After boiling, reduce the heat to low, cover the pot, and let the cider simmer gently for 2 hours to deepen the flavor and soften the fruit.
- Strain the cider: Allow the mixture to cool slightly, then strain it through a cheesecloth or fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible. Discard the solids and strain the liquid one more time for clarity.
- Serve: The cider can be served warm or chilled according to preference, optionally reheated before serving.
Notes
- Use a mix of sweet and tart apples for a more complex flavor.
- The cider can be stored in the refrigerator for up to 5 days or frozen for longer storage.
- For added warmth, garnish with a cinnamon stick or a slice of fresh apple when serving.
- Adjust sweetness by adding more or less brown sugar to taste.
- Consider simmering longer for a richer, more concentrated flavor.
