Ingredients
Chicken and Seasonings
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 tbsp olive oil
Glaze
- 1/2 cup honey
- 1/4 cup balsamic vinegar
- 1 tsp dried thyme or rosemary
Toppings
- 1 cup fresh or dried cranberries
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and help with even cooking.
- Season Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and black pepper to enhance flavor.
- Mix Glaze: In a small bowl, whisk together honey, balsamic vinegar, and dried thyme or rosemary until fully combined, creating a sweet and tangy glaze.
- Assemble Dish: Place the seasoned chicken breasts in the prepared baking dish. Pour the honey glaze evenly over the chicken, ensuring each piece is coated.
- Add Cranberries: Scatter the fresh or dried cranberries evenly over the glazed chicken. These will add a tart burst of flavor and texture.
- Bake Covered: Cover the baking dish tightly with aluminum foil to trap moisture. Bake in the preheated oven for 20 minutes to start cooking the chicken gently.
- Finish Baking: Remove the foil and continue baking uncovered for another 15–20 minutes until the chicken is fully cooked through and the glaze has thickened slightly.
- Add Feta: Sprinkle crumbled feta cheese over the chicken and return to the oven. Bake for an additional 5 minutes, allowing the cheese to soften and meld with the flavors.
- Optional Broil: For a bubbly and golden top, switch your oven to broil and broil the dish for 2–3 minutes, watching closely to avoid burning.
- Garnish: Remove from oven, garnish with fresh parsley if desired, and serve the dish hot for the best taste experience.
Notes
- Use fresh cranberries for a tart pop of flavor, or dried cranberries for a sweeter, chewier texture.
- Substitute thyme with rosemary or sage for a different herbaceous touch.
- Ensure chicken breasts are uniform in size for even cooking.
- Covering with foil during the initial baking helps keep the chicken moist and tender.
- Broiling at the end gives a nice golden crust but watch carefully to avoid burning the feta cheese.
- This recipe pairs well with rice, quinoa, or roasted vegetables for a full meal.
