Ingredients
Meatballs
- 1 pound lean ground turkey
- ½ yellow onion, grated
- 4 garlic cloves, minced
- ¼ cup whole wheat panko breadcrumbs or regular panko breadcrumbs
- ¼ cup minced flat-leaf parsley
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- ½ teaspoon salt
- ⅛ teaspoon cayenne pepper
Honey Garlic Glaze
- 3 tablespoons honey
- 1 teaspoon apple cider vinegar
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly coat a large baking sheet with cooking spray to prevent the meatballs from sticking.
- Combine Ingredients: In a large bowl, mix together the lean ground turkey, grated yellow onion, minced garlic, panko breadcrumbs, minced parsley, chili powder, ground cumin, paprika, salt, and cayenne pepper until well combined.
- Form Meatballs: Using about 2 tablespoons of the mixture per meatball (a medium cookie scoop works well), roll the mixture between your palms to form evenly sized meatballs. Place them on the prepared baking sheet, spacing them slightly apart.
- Bake Meatballs: Bake the meatballs in the preheated oven until cooked through, approximately 15 minutes. They should be firm to the touch and reach an internal temperature of 165°F (74°C).
- Prepare Honey Garlic Glaze: While the meatballs bake, whisk together the honey and apple cider vinegar in a small bowl until combined.
- Brush and Finish Baking: Remove the meatballs from the oven and brush each generously with the honey garlic glaze. Return the meatballs to the oven and bake for an additional 2 minutes to set the glaze.
- Serve: Serve warm as appetizers or over rice for a quick and healthy dinner option.
Notes
- You can substitute ground chicken for turkey if preferred.
- For a spicier version, increase the cayenne pepper or add red pepper flakes.
- Whole wheat panko adds extra fiber but regular panko works just as well.
- The meatballs can be made ahead and reheated in the oven for convenience.
- Serve with steamed rice or a side salad for a balanced meal.
