Honey Walnut Shrimp is a delightful and creamy seafood dish featuring tender large shrimp coated in a sweet honey-mayo sauce and topped with crunchy candied walnuts. Served over rice with shredded green cabbage and green onions, this recipe offers a perfect balance of textures and flavors in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

For Candied Walnuts

  • ½ cup walnut halves
  • 2 tablespoons cane sugar
  • 1 tablespoon unsalted butter
  • 2 tablespoons water

For Shrimp

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons arrowroot starch
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoons olive oil

For Sauce

  • 2 tablespoons avocado mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

To Serve

  • Cooked rice
  • Green cabbage (shredded)
  • Green onions (sliced)
  • Sesame seeds (optional)

Instructions

  1. Candy the Walnuts: In a large non-stick skillet over medium heat, combine butter, walnuts, cane sugar, and water. Stir continuously until the sugar melts and coats the walnuts evenly, about 5 minutes. Immediately transfer the walnuts onto parchment paper and separate them to prevent clumping. Allow to harden while you prepare the shrimp. Wipe down the skillet afterwards.
  2. Prepare the Shrimp: In a large bowl, combine the shrimp with arrowroot starch, garlic powder, and salt. Toss until all shrimp are evenly coated with the mixture.
  3. Cook the Shrimp: Heat olive oil in a large skillet over medium-high heat. Add the coated shrimp and cook, turning occasionally, for about 2-3 minutes per side, or until fully cooked and slightly golden.
  4. Make the Sauce: In a small bowl, whisk together avocado mayonnaise, honey, and lemon juice until smooth and well combined.
  5. Toss Shrimp in Sauce: Pour the honey-mayo sauce over the cooked shrimp in the skillet and gently toss to coat all the shrimp evenly.
  6. Assemble and Serve: Serve the sauced shrimp over cooked rice. Top with shredded green cabbage, candied walnuts, sliced green onions, and a sprinkle of sesame seeds if desired. Enjoy immediately.

Notes

  • Arrowroot starch is used as a light coating for the shrimp; cornstarch can be substituted if unavailable.
  • For extra crunch, you can lightly toast the walnuts before candying.
  • Adjust the honey amount to taste if you prefer it sweeter or less sweet.
  • This dish is best served immediately for the crunchiest texture of the candied walnuts and freshest shrimp.
  • To make this recipe gluten-free, ensure your mayonnaise and other ingredients do not contain gluten.
