Ingredients
Hot Honey
- 1/2 cup honey (not raw honey)
- 2 teaspoons red pepper flakes or 6 Thai chiles, minced with seeds
- 1/2 tablespoon apple cider vinegar
- 1 garlic clove, sliced
Chicken Poppers
- 1.5 lbs boneless skinless chicken breast
- 4 cups corn flakes
- 1/4 cup all-purpose flour, or 1:1 gluten-free flour
- 2.5 teaspoons garlic powder
- 2.5 teaspoons coarse salt
- 1 teaspoon cracked black pepper
- 1.5 teaspoons ground mustard
- 1.5 teaspoons paprika
- 3 large eggs
- 1 tablespoon water
- 3-4 tablespoons avocado oil or olive oil
Instructions
- Make the Hot Honey Sauce: Combine honey, red pepper flakes (or minced Thai chiles), apple cider vinegar, and sliced garlic in a small saucepan. Heat over medium-high heat until the mixture reaches a gentle boil. Remove from heat and pour into a mason jar. Set aside to cool.
- Preheat the Air Fryer: Set the air fryer to 370-375°F (188-190°C) so it’s ready when the chicken is coated.
- Prepare the Chicken: Slice the chicken breast into 1.5 to 2-inch pieces and set aside for breading.
- Make the Cornflake Coating: In a food processor, combine corn flakes, flour, garlic powder, salt, black pepper, ground mustard, and paprika. Pulse on low until the mixture turns into fine bread crumb-like texture. Transfer to a medium-sized bowl.
- Prepare the Egg Wash: Crack the eggs into another medium bowl. Add water and whisk together until fully combined.
- Double Dredge the Chicken: Dip each chicken piece first into the egg mixture, allowing excess to drip off. Then coat in the cornflake mixture. Repeat by dipping again in the egg and then the cornflake coating once more. Place the coated chicken on a plate. Continue until all pieces are coated.
- Air Fry the Chicken: Spray the air fryer basket with cooking spray or brush with some oil. Arrange as many chicken pieces as will fit without crowding (about 11 pieces). Drizzle 1 tablespoon of oil evenly over the chicken. Cook for 4 minutes, then flip the pieces and cook for another 4 minutes or until golden brown and crispy. Cooking time may vary depending on your air fryer. Repeat with remaining pieces.
- Toss with Hot Honey: Transfer the cooked chicken to a large bowl. Drizzle 1/2 cup of the cooled hot honey sauce over the chicken and gently toss to coat evenly. Add more hot honey if you prefer a stronger flavor.
- Serve: Enjoy the hot honey chicken poppers on their own or alongside your favorite side dishes.
Notes
- Use regular honey, not raw honey, to ensure smooth consistency in the sauce.
- Adjust the amount of red pepper flakes or Thai chiles depending on your preferred spice level.
- For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free flour blend.
- Double dredging ensures a thicker, crunchier crust on the chicken.
- Be careful not to overcrowd the air fryer basket to allow even cooking and crispiness.
- Leftover hot honey sauce can be stored in the refrigerator for up to one week.
