Ingredients
Ingredients
- 2-4 pounds sweet potatoes
- Salt (optional, about 1 teaspoon per pound of potatoes)
Instructions
- Prepare the potatoes: Rinse and scrub the whole sweet potatoes thoroughly to remove any dirt. If you prefer, peel the potatoes using a vegetable peeler and cut into 1-2 inch cubes for faster cooking.
- Boil pot of water: Fill a large pot with enough water to cover the potatoes by at least 1 inch. Add salt if using, approximately 1 teaspoon per pound of potatoes.
- Cook the sweet potatoes: Add the potatoes to the pot and bring the water to a boil over high heat. Once boiling, reduce the heat to medium-low to maintain a rapid simmer.
- Boiling times: Boil cubed sweet potatoes for 12 to 15 minutes. Small to medium whole potatoes require 20 to 25 minutes. Large whole potatoes need 30 to 35 minutes. Test for doneness by piercing with a fork – the potatoes should be fork tender.
- Drain the potatoes: When done, drain the sweet potatoes in a colander or use a slotted spoon to remove them from the water.
- Use as desired: Use boiled sweet potatoes in your favorite recipes such as mashed sweet potatoes, pies, or casseroles.
Notes
- Boiling times may vary slightly depending on the size and freshness of your sweet potatoes.
- Salting the water enhances the flavor of the sweet potatoes but can be omitted to reduce sodium intake.
- For quicker cooking, peel and cube the potatoes before boiling.
- Boiled sweet potatoes can be stored in the refrigerator for up to 3 days or frozen for longer storage.
