Ingredients
Seafood
- 6 lobster tails (cold water preferred)
Seasoning & Sauce
- 4 tablespoons butter, melted
- 3 cloves garlic, minced
- 2 tablespoons lemon juice
- Seasoning to taste (Cajun, Old Bay, or paprika)
Instructions
- Butterfly Lobster Tails: Use kitchen shears to carefully cut down the center of the top shell of each lobster tail, stopping at the tail fin. Gently pry the shell halves apart with your fingers and loosen the lobster meat from the shell, keeping it attached at the fin.
- Prepare Meat: Lift the meat up so it rests on top of the shell halves with the shell closed below. Remove any visible dark vein, rinse lobster meat gently with cold water, and pat dry with a paper towel.
- Season Lobster Tails: Melt the butter and stir in the minced garlic and lemon juice. Brush this garlic butter mixture liberally over the lobster tails. Lightly season with your choice of Cajun, Old Bay, or paprika seasoning to add flavor and color.
- Cook Lobster Tails: Choose your preferred cooking method—broil, bake, or grill:
- Broiling (Preferred Method): Preheat the broiler. Place the buttered and seasoned lobster tails under the broiler and cook for 7-10 minutes. Pull the tails from heat when the internal temperature reaches 140°F to avoid rubbery meat.
- Baking: Preheat oven to 450°F. Place buttered and seasoned lobster tails on a baking sheet and bake for 10-15 minutes, checking to reach an internal temperature of 140-145°F.
- Grilling: Preheat grill to medium-high heat. Position lobster tails cut-side up and grill for 4-6 minutes, then flip. Baste with butter throughout the grilling process and cook for a total of 8-12 minutes until fully cooked but tender.
- Serve: Brush the cooked lobster tails with remaining garlic butter, saving half for dipping. Serve immediately with fresh lemon wedges for squeezing over the lobster meat.
Notes
- Do not overcook the lobster tails; the ideal internal temperature is 140-145°F to keep the meat tender.
- Butterflying the lobster tails allows for even cooking and makes it easier to season and serve.
- Cajun, Old Bay, or paprika seasoning adds different flavor profiles; feel free to experiment based on your preference.
- Use kitchen shears for easy and safe cutting of lobster shells.
- Keep lobster tails cold until cooking to maintain freshness.
