Ingredients
Starter Ingredients
- 1 cup whole grain wheat flour (or unbleached all-purpose flour or einkorn flour)
- 1 cup filtered water
Instructions
- Initial Mixing: On day one, combine one cup of flour and one cup of filtered water in a clean bowl. Stir vigorously to incorporate all the flour, scraping down the sides to ensure even mixing. Cover the bowl with a clean tea towel and let it sit undisturbed at room temperature for 24 hours to begin fermentation.
- Feeding the Starter (Days 2-5): On day two, discard half of the mixture to control growth and prevent over-acidity. Add another cup of flour and one cup of filtered water to the remaining starter. Stir well to combine, cover again with the tea towel, and let sit for another 24 hours. Repeat this feeding process daily through day five.
- Twice Daily Feeding (Days 6-7): Starting on day six, feed the starter every 12 hours instead of once a day to encourage stronger yeast activity. Each feeding involves discarding half, then mixing in one cup of flour and one cup of filtered water. Continue covering and letting it ferment at room temperature.
- Ready to Use: By day seven, your sourdough starter should be bubbly and have doubled in size, indicating active fermentation with beneficial bacteria and yeast. At this stage, it is ready to be used for baking sourdough bread, pancakes, English muffins, and other fermented baked goods.
Notes
- Use filtered or non-chlorinated water to avoid inhibiting yeast growth.
- Discarding half the starter at each feeding prevents it from becoming too acidic and encourages healthy microbial balance.
- Keep the starter covered with a breathable cloth to allow airflow while preventing debris contamination.
- Once active, the starter can be stored in the refrigerator and fed weekly if not baking regularly.
- Flour type affects flavor and activity; whole grain flours tend to ferment faster and produce more robust flavor.
