Cowboy casserole is a hearty and comforting dish featuring spicy ground beef, black beans, corn, creamy soup, and crispy tater tots, all baked together with melted cheddar cheese for a satisfying meal perfect for family dinners.

  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 pound lean ground beef
  • 1 ounce taco seasoning (1 package or 2 tablespoons homemade taco seasoning)
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 10.5 ounces condensed cream of chicken soup
  • 8 ounces shredded cheddar cheese, divided (about 2 cups)
  • ½ cup milk
  • ¼ cup sour cream
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • 16 ounces Tater Tots (about 4 cups)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook Beef: Heat a large skillet over medium-high heat and add the ground beef. Cook until there is no pink left in the meat, then drain off any excess fat. Stir in the taco seasoning and cook for an additional 2 minutes to infuse the flavors.
  3. Mix Ingredients: To the cooked beef in the skillet, add the black beans, thawed corn, condensed cream of chicken soup, half of the shredded cheddar cheese (½ cup), milk, sour cream, onion powder, and black pepper. Stir everything thoroughly until well combined.
  4. Assemble Casserole: Grease a 9×13-inch casserole dish well. Spread half of the tater tots evenly on the bottom. Spoon and spread the beef mixture evenly over the tater tots layer.
  5. Top & Bake: Place the remaining tater tots evenly over the beef mixture. Sprinkle the remaining shredded cheddar cheese on top. Bake the casserole uncovered in the preheated oven for 20 to 25 minutes until the top is browned and the casserole is bubbly.

Notes

  • Make sure to fully drain and rinse the black beans to reduce sodium and improve texture.
  • You can substitute cream of chicken soup with cream of mushroom or cream of celery for a different flavor.
  • For a spicier casserole, add a pinch of cayenne or use spicy taco seasoning.
  • Allow the casserole to rest for 5 minutes after baking to set before serving.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
