Ingredients
Beef and Seasonings
- 2 tablespoons olive oil
- 2 pounds stewing beef, cubed (such as chuck roast or chuck steak)
- 1 teaspoon salt, plus more for seasoning
- 3 tablespoons curry powder
- 1/2 teaspoon red pepper flakes (optional)
Vegetables and Aromatics
- 1 onion, diced
- 6 cloves garlic, minced
- 1-inch piece ginger root, peeled and minced
Liquids and Garnish
- 1 can (14 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 1 can (14 ounces) coconut milk
- Fresh cilantro, for serving
Instructions
- Season the beef: Place the cubed beef on a cutting board and season generously with salt to enhance the flavor.
- Sear the beef: Heat olive oil in a large pan or cast-iron skillet over medium-high heat. In batches to avoid overcrowding, sear the beef cubes for 1-2 minutes per side until browned. They do not need to be cooked through at this stage, just browned to develop flavor. If using a removable slow cooker pot suitable for stovetop, sear the beef directly in it.
- Add beef and spices to slow cooker: Transfer the seared beef to the slow cooker. Sprinkle curry powder, additional salt, and red pepper flakes (if using) over the beef. Stir well to coat the meat evenly with the spices.
- Add aromatics and liquids: Add the diced onion, minced garlic, and minced ginger to the slow cooker, mixing to combine. Pour in the diced tomatoes, tomato paste, and coconut milk. Stir everything together until well combined.
- Cook: Cover the slow cooker and cook on high for 5-6 hours or low for 8-10 hours, until the beef is tender and easily pulled apart with a fork. This slow cooking process allows the flavors to meld beautifully and the beef to become melt-in-your-mouth tender.
- Finish and season: Once cooking is complete, stir the curry well and taste. Adjust seasoning with salt and pepper as needed.
- Serve: Serve the beef curry hot with a side of rice. Garnish with fresh cilantro for a bright, herbaceous finish. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Notes
- Searing the beef before slow cooking adds enhanced depth of flavor and color to the dish.
- If you prefer less spice, omit or reduce the red pepper flakes.
- This curry freezes well—freeze in portioned containers for easy meal prep.
- Try serving with steamed vegetables or naan bread for a full meal.
- Use fresh ginger instead of powdered for the best aromatic impact.
