Learn how to roast chestnuts perfectly in your oven with this simple step-by-step recipe. Using fresh chestnuts scored and soaked before roasting at high heat, you’ll achieve tender, flavorful nuts with skins that peel away easily after steaming. Enjoy these warm roasted chestnuts as a comforting snack or incorporate them into your favorite dishes.

  • Total Time: 1 hour 40 minutes
  • Yield: 4 servings

Ingredients

Chestnuts

  • 1 lb chestnuts (preferably Italian or European, or chestnuts from Michigan)
  • Water (for soaking)

Instructions

  1. Rinse Chestnuts: Place chestnuts in a colander and rinse thoroughly under cold running water. Drain them well to remove any dirt or debris.
  2. Score Chestnuts: Place the flat side of each chestnut down on a cutting board with the rounded belly side facing up. Using a sharp paring knife or chestnut knife, carefully cut an X into the rounded side of each chestnut, making two cuts perpendicular to each other but avoiding scoring too deeply to protect the inner skin.
  3. Soak Chestnuts: Transfer the scored chestnuts into a bowl and cover with cold tap water. Let them soak for one hour to help loosen the shells and make peeling easier after roasting.
  4. Preheat Oven and Roast: Preheat your oven to 425°F (218°C). Drain the chestnuts (no need to dry completely) and place them in a single layer on a baking sheet. Roast for 25 to 30 minutes, turning them occasionally to ensure even cooking. The chestnuts are done when the skins have peeled back and the flesh inside is soft.
  5. Steam Chestnuts: Remove roasted chestnuts from the oven and immediately place them into a kitchen cloth. Gather the edges of the cloth to form a pouch, allowing the chestnuts to steam for 10 to 15 minutes. Alternatively, place them in a rolled-up paper bag to steam and soften the shells.
  6. Peel Chestnuts: Carefully squeeze the steamed chestnuts through the cloth or paper bag to crack the shells. While they are still hot, peel away the outer shell by pulling back the scored X and then remove the inner papery skin. If needed, use a sharp knife gently to remove any stubborn skin without damaging the nut inside.
  7. Inspect and Serve: Discard any chestnuts that are spoiled or have an off smell. Serve the warm roasted chestnuts as a snack or add your favorite herbs and seasonings for extra flavor.

Notes

  • Be careful when scoring the chestnuts to avoid cutting too deeply into the inner nut.
  • Steaming immediately after roasting helps loosen the skins, making peeling much easier.
  • Use a sharp knife for peeling stubborn skin to avoid damaging the chestnut flesh.
  • Roasted chestnuts are best enjoyed fresh and warm but can be stored in an airtight container for a day or two.
