Ingredients
Sweet Potato Mixture
- 1 pound sweet potato, peeled and cut into chunks
- 1 tablespoon minced jalapeno
- ¼ cup chopped cilantro
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- 1 ½ teaspoons ground coriander
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon curry powder
- ½ teaspoon cinnamon
- 1 egg
- ½ cup panko breadcrumbs
- 2 tablespoons all-purpose flour
For Cooking
- 2 tablespoons oil (divided)
Instructions
- Boil Sweet Potatoes: Peel and cut the sweet potatoes into medium-sized chunks. Place them in a medium pot and add enough water to cover. Cover the pot and bring to a boil over high heat, then reduce to medium heat and simmer until the potatoes are fork-tender, about 15 minutes.
- Mash and Mix: Drain the sweet potatoes and mash them until smooth. Allow to cool slightly, then add the minced jalapeno, chopped cilantro, smoked paprika, ground cumin, ground coriander, salt, black pepper, curry powder, cinnamon, egg, panko breadcrumbs, and all-purpose flour. Mix until all ingredients are well combined.
- Form and Cook Patties: Heat 1 tablespoon of oil in a sauté pan over medium heat. Scoop about ¼ cup of the sweet potato mixture and flatten it gently into a patty shape. Place it carefully in the pan. Repeat with the remaining mixture, cooking the patties in batches if necessary.
- Sauté Patties: Cook each patty for 3 to 4 minutes until the underside is golden brown. Flip the patties, adding more oil if the pan appears dry, and cook the other side until golden brown as well. Remove cooked patties from the pan and set aside.
- Serve Warm: Once all patties are cooked, serve them warm as an appetizer or side dish. They pair beautifully with chutneys or yogurt-based sauces.
Notes
- For a spicier kick, increase the amount of jalapeno or add a pinch of cayenne pepper.
- These patties can be made ahead and refrigerated; reheat in a pan for best crispiness.
- Gluten-free version: Substitute panko and all-purpose flour with gluten-free alternatives.
- Vegetarian-friendly and nut-free.
