This Instant Pot Baked Potato recipe provides a quick and easy way to enjoy perfectly cooked russet potatoes with a crispy skin and fluffy interior. Utilizing the pressure cooking method of the Instant Pot allows you to bake potatoes much faster than traditional oven baking, making it ideal for a quick weeknight side or base for your favorite toppings.

  • Total Time: 29 minutes
  • Yield: 4 servings

Ingredients

Potatoes

  • 32 oz russet potatoes (preferably for best results)

Seasoning

  • 2 tbsp olive oil
  • 2 tsp salt

Instant Pot Setup

  • 1 cup water for 6-quart Instant Pot, or 1.5 cups for 8-quart Instant Pot

Instructions

  1. Prepare the Potatoes: Prick each russet potato a couple of times with a fork to allow steam to escape during cooking.
  2. Season the Potatoes: Rub the potatoes all over with olive oil and salt to enhance the flavor and help crisp the skins.
  3. Add Water and Trivet: Place the trivet inside the base of your Instant Pot and add 1 cup of water for a 6-quart model or 1.5 cups for an 8-quart model. Ensure minimum water requirements are met according to your pressure cooker’s manual if different.
  4. Set Cooking Time: Lock the lid, set the valve to ‘sealing’, and select the manual/high pressure cooking setting. Adjust the cook time according to the size and type of potato, typically about 12-15 minutes for medium russet potatoes.
  5. Natural Pressure Release: After cooking, allow the pressure to release naturally for 10 minutes before opening the weighted valve to release any remaining pressure.
  6. Check Doneness: Carefully open the lid and check if the potatoes are cooked through by inserting a fork or skewer. If not fully cooked, replace the lid and cook for a few more minutes as needed.

Notes

  • Cooking times vary based on potato size. Medium russets usually take about 12-15 minutes; adjust accordingly for larger or smaller potatoes.
  • The natural pressure release step is essential for even cooking and to avoid potato bursting.
  • You can add seasoning or toppings after cooking such as butter, sour cream, cheese, or chives as desired.
  • If you do not have an Instant Pot, consider using a pressure cooker with similar settings or opt for traditional oven baking instead.
