Ingredients
Bones and Vegetables
- 2 1/2 pounds assorted organic meat bones
- 2 carrots, chopped medium
- 2 stalks celery, chopped medium
- 1 onion, halved with skin left on
- 2 cloves garlic, skin left on
Seasonings and Liquids
- Assortment of fresh herbs (such as parsley, thyme, and bay leaves)
- 1 Tablespoon apple cider vinegar
- Generous pinch of whole black peppercorns
- 1 teaspoon kosher salt
- 8 cups water (enough to come 1-inch below max fill line of Instant Pot)
Instructions
- Prepare Ingredients: Place the assorted organic meat bones into the Instant Pot, filling it about halfway. Add the chopped carrots, celery, onion halves with skin, garlic cloves with skin, fresh herbs, apple cider vinegar, whole black peppercorns, and kosher salt to the pot.
- Add Water: Pour in 8 cups of water or enough to come 1-inch below the Instant Pot’s maximum fill line to avoid overfilling during pressure cooking.
- Seal Instant Pot: Ensure the sealing ring is properly in place on the lid. Lock the lid onto the Instant Pot and set the steam release valve to the ‘sealing’ position.
- Set Pressure Cooking: Press the ‘manual’ button and set the Instant Pot to high pressure for 120 minutes. Note that it may take 15 to 30 minutes for the Instant Pot to come to full pressure before the countdown begins.
- Natural Pressure Release: After the cooking time is complete, allow the pressure to release naturally which will take approximately 15 to 30 minutes. Wait until the float valve drops before opening the lid.
- Strain and Cool Broth: Carefully strain the broth through cheesecloth or a fine mesh strainer to remove solids. Let the broth cool. A well-made broth will form a layer of fat on top and gelatinize as it cools thoroughly. Skim off the fat layer with a spoon and discard if desired.
Notes
- Using a mix of bones with connective tissue (like knuckle, foot, or neck bones) helps achieve a rich gelatinous broth.
- Apple cider vinegar aids in extracting minerals from the bones during cooking.
- Natural pressure release is important to preserve the broth’s clarity and flavor.
- Broth can be stored in the refrigerator for up to 5 days or frozen for several months.
- Remove the fat layer if a leaner broth is preferred, or save it for cooking purposes.
