Ingredients
Chicken
- 2 pounds boneless skinless chicken breasts (or thighs)
Liquids and Seasonings
- 1 cup chicken broth
- 1/4 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Prepare the Instant Pot: Place the chicken breasts in the Instant Pot. Pour in 1 cup of chicken broth and 1/4 cup of water over the chicken. Sprinkle the chicken evenly with 1 teaspoon salt and 1/2 teaspoon black pepper to season.
- Set Pressure Cooking: Close the Instant Pot lid securely and set the valve to the Sealing position. Select the Manual or Pressure Cook function on HIGH pressure. Cook for 10 minutes if using fresh chicken breasts or 20 minutes if using frozen chicken.
- Release the Pressure: After cooking finishes, allow the pressure to naturally release for 5 minutes. Then, carefully perform a quick release of any remaining pressure by turning the valve to Venting.
- Shred the Chicken: Open the Instant Pot and remove the cooked chicken breasts. Using two forks or a hand mixer, shred the chicken until it reaches your desired texture. To keep the shredded chicken moist, optionally stir it back into the cooking broth.
Notes
- You can substitute chicken thighs for breasts for a richer flavor and more tender texture.
- Adding the shredded chicken back into the broth keeps it moist and flavorful, ideal for tacos, salads, or sandwiches.
- Adjust the seasoning according to your taste or intended recipe use.
- For meal prep, cool the shredded chicken completely before storing in airtight containers in the refrigerator for up to 4 days or freezer for up to 3 months.
- If cooking frozen chicken, be sure to increase the pressure cooking time to ensure it is fully cooked through.
