Ingredients
Chicken & Seasoning
- 1 (4-pound) whole chicken
- 3 tablespoons olive oil (divided)
- 1 tablespoon paprika
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- 2 teaspoons salt
- ¼ teaspoon ground black pepper
- 1 cup chicken broth
Instructions
- Mix spices: In a small bowl, combine the paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and ground black pepper thoroughly to make a spice blend.
- Season the chicken: Gently loosen the skin over the chicken breasts. Rub 1 tablespoon of olive oil and about a third of the seasoning mixture under the skin. Then rub another tablespoon of olive oil and the remaining seasoning mix over the outside and inside the chicken cavity.
- Saute: Set the Instant Pot to Sauté mode and add the remaining 1 tablespoon of olive oil. Place the chicken breast-side down in the pot and cook for 4–5 minutes until golden brown. Turn the chicken over and brown the other side for about 5 minutes.
- Deglaze: Remove the chicken and place it on a clean plate. Pour the chicken broth into the pot and scrape the bottom thoroughly with a wooden spoon to remove any browned bits and prevent burning.
- Place chicken in pot: Cancel the Sauté mode, place the trivet inside the pot, and set the chicken on the trivet breast-side up.
- Pressure cook: Close the Instant Pot lid and set the valve to Sealing. Cook on High Pressure for 24 minutes.
- Release pressure: Allow the pressure to release naturally for 15 minutes, then carefully vent any remaining pressure manually.
- Check doneness: Ensure the thickest part of the breast and thigh registers 165°F on a meat thermometer without touching the bone.
- Optional Broil: For crispy skin, transfer the chicken to a sheet pan, set an oven rack about 6 inches below the broiler, and broil for 4–5 minutes until the skin is golden and crispy.
Notes
- Loosening the skin helps infuse flavor directly onto the breast meat.
- Browning the chicken on both sides before pressure cooking adds extra flavor and color.
- Deglazing the pot prevents burn errors on the Instant Pot and adds flavor to the broth.
- Natural pressure release helps keep the meat tender and juicy.
- Always check internal temperature to ensure food safety.
- Broiling is optional but recommended for crispy skin.
