Ingredients
Dressing
- ⅓ cup extra-virgin olive oil
- 3 Tablespoons lemon juice
- 1 Tablespoon dried Italian herbs
- Salt and pepper (to taste)
Chickpeas (optional)
- ½ Tablespoon olive oil
- 1 ½ cups canned chickpeas (rinsed and drained)
- 1 teaspoon dried Italian herbs
- ¼ teaspoon garlic powder
Salad
- 4 cups Italian lettuce blend
- 2 cups Romaine lettuce (finely chopped)
- 2 cups cucumbers (sliced)
- 1 cup canned artichoke hearts (drained)
- ½ cup Italian salami (such as salami Milano)
- ½ cup chopped tomatoes
- ½ cup olives (stuffed with almonds or Kalamata olives, halved)
- 3 Tablespoons Parmesan cheese
Instructions
- Make the dressing: In a small bowl, whisk together the extra-virgin olive oil, lemon juice, dried Italian herbs, salt, and pepper until well combined. Set aside to allow the flavors to meld.
- Prepare the chickpeas: Heat ½ tablespoon of olive oil in a skillet over medium-high heat. Add the rinsed and drained chickpeas, dried Italian herbs, and garlic powder. Cook, stirring frequently, for about 5 minutes until the chickpeas are heated through and fragrant. Remove from heat and set aside.
- Chop the vegetables: Finely chop the Romaine lettuce and prepare the Italian lettuce blend. Slice the cucumbers and chop the tomatoes. Drain the artichoke hearts and halve the olives.
- Assemble the salad: In a large bowl, combine the Italian lettuce blend, chopped Romaine lettuce, cucumbers, chopped tomatoes, artichoke hearts, olives, and salami. Add the cooked chickpeas if using.
- Add dressing and cheese: Pour the prepared dressing over the salad ingredients. Sprinkle the Parmesan cheese on top.
- Toss and serve: Toss the salad thoroughly to ensure all ingredients are evenly coated with the dressing. Serve immediately or chill for 20 minutes before serving for a refreshing touch.
Notes
- Chickpeas are optional but add a nice texture and protein to the salad.
- You can substitute salami with other Italian cured meats like prosciutto or pepperoni if preferred.
- For a vegetarian option, omit the salami and include the chickpeas.
- Use fresh lemon juice for the best flavor in the dressing.
- Chilling the salad before serving allows the flavors to develop further.
