- 1/4 cup ranch dressing
- 1 tablespoon minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Optional Garnishes
- Green onion, chopped
- Extra jalapeños, sliced
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the casserole evenly.
- Combine Main Ingredients: In a large casserole dish, add the cooked shredded chicken breast along with frozen cauliflower rice, diced jalapeños, onion, red bell pepper, and carrots.
- Mix Sauce: In a small bowl, whisk together minced garlic, salt, black pepper, canned coconut cream, buffalo sauce, and ranch dressing until smooth and well combined.
- Incorporate Sauce: Pour the prepared sauce over the chicken and vegetable mixture in the casserole dish. Use two forks or tongs to thoroughly combine the sauce with all ingredients, ensuring everything is evenly coated. Smooth out the mixture into an even layer in the dish to promote uniform baking.
- Bake: Place the casserole dish into the preheated oven and bake for 45 minutes. For a crisper top, extend baking time slightly as desired.
- Garnish and Serve: Remove the casserole from the oven and drizzle extra buffalo or ranch sauce on top. Garnish with chopped green onions and additional sliced jalapeños if desired before serving.
