Ingredients
Main Ingredients
- 8 oz Mozzarella Cheese, grated
- 3 tablespoons Cream Cheese (1.6 oz)
- 1 cup Almond Flour
- 1 large Egg
- ½ teaspoon Salt
Instructions
- Prepare the Cheese Mixture: In a microwave-safe bowl, combine the grated mozzarella cheese, cream cheese, and almond flour.
- Heat the Mixture: Microwave the mixture on high for 2 minutes or alternatively use a sous vide method by placing the mixture in a heatproof container submerged in gently simmering water for 5-7 minutes, until the cheeses are melted and combined.
- Mix the Dough: Stir the heated mixture thoroughly to incorporate all ingredients. Add the egg and salt to the bowl and mix well to form a cohesive dough.
- Roll Out the Dough: Place the dough between two sheets of baking paper. Using a rolling pin or a tall glass, roll out the dough to your desired thickness. If sticky, lightly dust the surface with almond flour.
- Bake the Dough: Preheat your oven to 425°F (220°C) and line a baking pan with baking paper. Transfer the rolled dough onto the pan and bake for 5 to 10 minutes depending on thickness until set and slightly golden.
- Prepare the Pizza (Optional): After the initial bake, remove the dough from the oven. Spread a low-carb sauce such as sugar-free marinara and add toppings like pepperoni, mushrooms, and extra mozzarella. Return to the oven at 400°F (200°C) and bake for an additional 5 minutes until toppings are cooked and cheese melts.
Notes
- This dough is very versatile and can be used for pizza bases, breadsticks, or flatbreads.
- Microwaving is the quickest method to melt the cheeses, but sous vide provides a gentle, hands-off alternative if preferred.
- Adjust baking time based on dough thickness to avoid under or overbaking.
- Store unused dough wrapped tightly in the refrigerator for up to 3 days.
- Use almond flour for a keto-friendly dough; other flours will alter the nutritional profile.
- For crispier crust, allow dough to cool slightly after baking before adding toppings.
