This Keto Garlic Steak Bites recipe combines tender, marinated lean steak cubes with sautéed Brussels sprouts and butternut squash, all infused with rich garlic and fresh herbs. Quick to prepare, this low-carb dish is perfect for a flavorful, healthy meal that fits perfectly into a ketogenic lifestyle.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Steak Marinade

  • 600 g lean steak, sliced into 1-inch cubes
  • 2 tbsp extra virgin olive oil (divided)
  • 1 tbsp low sodium soy sauce
  • 1 tsp hot chili sauce (Sriracha)
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Vegetables

  • 130 g raw Brussels sprouts, quartered
  • 100 g butternut squash, cut into ½ inch cubes

Aromatics and Garnish

  • 4 garlic cloves, minced (divided)
  • 3 tbsp butter (divided)
  • 1 tsp fresh thyme, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 0.5 tsp crushed red pepper flakes

Instructions

  1. Marinate the Steak: Slice the steak into 1-inch cubes and place in a bowl. Add soy sauce, 1 tablespoon of olive oil, Sriracha, 0.5 teaspoon salt, and 0.5 teaspoon black pepper. Mix well to coat and allow to marinate while preparing the vegetables. Meanwhile, cut butternut squash into ½ inch cubes, quarter the Brussels sprouts, mince the garlic, and finely chop both the parsley and thyme.
  2. Sauté Vegetables: Heat a skillet over medium-high heat and add 1 tablespoon olive oil with 1 tablespoon butter. Once the butter is melted, add the butternut squash and Brussels sprouts. Cook for 3 minutes, then add 1 minced clove of garlic, stir, and continue cooking for another 2-3 minutes until the vegetables are tender when pierced with a fork.
  3. Cook Steak with Aromatics: Transfer the cooked vegetables to a plate to clear the skillet. Add the remaining 2 tablespoons of butter, 4 minced garlic cloves, fresh thyme, parsley, and crushed red pepper flakes to the skillet. Cook this mixture for about 30 seconds to release the flavors, then add the marinated steak cubes in a single layer. Let them cook undisturbed for 2 minutes to develop a good sear.
  4. Brown the Steak and Combine: Flip the steak bites and cook for another 1-2 minutes depending on your desired doneness, allowing a nice brown crust to form. Push the steak to one side of the skillet and return the cooked vegetables to the other side, warming them together for about 30 seconds.
  5. Serve and Garnish: Remove the skillet from heat. Garnish with additional fresh herbs and a sprinkle of crushed red pepper flakes for extra flavor and heat, then serve immediately while hot.

Notes

  • Adjust steak cooking time based on preferred doneness: less for rare, more for well done.
  • Use low sodium soy sauce to keep salt content moderate.
  • To keep it strictly keto, avoid adding any sugar or sweeteners to the marinade.
  • Fresh herbs can be substituted with dried if fresh are unavailable, but use less dried herbs.
  • Butter and olive oil blend adds richness and balanced fat content ideal for keto diets.
  • Ensure the steak pieces are spread in a single layer to achieve proper browning.
