Korean Ground Beef Noodles is a quick and delicious recipe featuring savory-sweet ground beef tossed with tender spaghetti and garnished with fresh green onions. Ready in just 20 minutes, this dish combines a flavorful sauce of soy, orange juice, brown sugar, and sweet chili sauce that perfectly complements the beef and noodles. Ideal for a busy weeknight dinner, it offers satisfying comfort with an exciting Korean-inspired twist.

  • Total Time: 20 minutes
  • Yield: 8 servings

Ingredients

Noodles

  • 8 oz Spaghetti

Beef & Aromatics

  • 1 Tablespoon Canola or Vegetable Oil
  • 1 Pound Ground Beef or ground chuck
  • 4 Cloves Garlic, minced

Sauce

  • ½ Cup Soy Sauce
  • ½ Cup Orange Juice
  • ½ Cup Brown Sugar
  • ¼ Cup Sweet Chili Sauce
  • 2 teaspoons Toasted Sesame Oil
  • 1 Tablespoon Cornstarch

Garnish

  • 2 Green Onions, sliced, plus more for garnish

Instructions

  1. Cook the spaghetti: Bring a large pot of heavily salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Drain well and set aside.
  2. Brown the beef: Heat the canola or vegetable oil in a cast iron skillet over medium-high heat. Add the ground beef and minced garlic. Use a meat chopper or spatula to break the beef into crumbles. Cook, stirring frequently, until browned all the way through, about 3-5 minutes. Drain excess grease from the pan.
  3. Prepare the sauce: In a glass measuring cup or bowl, whisk together the soy sauce, orange juice, brown sugar, sweet chili sauce, toasted sesame oil, and cornstarch until smooth and well combined.
  4. Simmer the beef with sauce: Pour the sauce mixture over the browned ground beef in the skillet. Stir to combine and simmer over medium heat until the sauce thickens slightly and coats the beef evenly, about 3-4 minutes.
  5. Combine and garnish: Add the cooked spaghetti to the skillet and toss gently to coat the noodles well with the beef and sauce. Remove from heat and sprinkle with sliced green onions. Garnish with additional green onions before serving.

Notes

  • Using a cast iron skillet helps achieve a nice sear on the beef for enhanced flavor.
  • Adjust the sweetness and spiciness by modifying the amount of brown sugar and sweet chili sauce to your preference.
  • For a gluten-free version, substitute regular soy sauce with tamari or gluten-free soy sauce and use gluten-free pasta.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a skillet or microwave until warmed through.
