Korean Strawberry Milk is a delightful, refreshing drink combining homemade strawberry syrup, macerated strawberries, and unsweetened non-dairy milk. This easy-to-make beverage brings the sweet, natural flavor of strawberries into a creamy, cold drink perfect for warm days or any time you crave a fruity treat.

  • Total Time: 20 minutes
  • Yield: 3 servings

Ingredients

Strawberries

  • 1 pound strawberries, finely diced (2 ¾ cups total; divided into 2 cups and ¾ cup)

Syrup

  • 3 tbsp cane or brown sugar (for syrup)
  • 1 large squeeze of lemon juice or lime juice

Macerated Strawberries

  • ¾ cup diced strawberries
  • 1 tbsp cane or brown sugar (for maceration)

Drink

  • 2-3 cups unsweetened non-dairy milk (such as soy milk)
  • Ice cubes, as desired

Instructions

  1. Macerate the Strawberries: Take the ¾ cup of finely diced strawberries and add 1 tablespoon of sugar. Stir well to combine and draw out the juices. Set aside and let the strawberries macerate while you prepare the syrup.
  2. Prepare the Strawberry Syrup: Place the 2 cups of diced strawberries into a pan along with 3 tablespoons of sugar and a large squeeze of lemon or lime juice. Heat the mixture and bring it to a boil. Then reduce to just above a simmer and cook for about 10 minutes, stirring frequently, until the strawberries break down and the mixture becomes syrupy.
  3. Chill the Syrup: Remove the pan from heat and allow the strawberry syrup to cool completely. Once cooled, place it in the refrigerator until cold.
  4. Assemble the Drink: In a glass, add 2 to 3 tablespoons of the chilled strawberry syrup, followed by ¾ cup of your chosen unsweetened non-dairy milk and ice cubes to your preference. Top the drink with about 1 tablespoon of the macerated strawberries. Stir gently to combine all flavors evenly.
  5. Serve and Store: Enjoy immediately for the freshest taste. Store any leftover syrup and macerated strawberries in the refrigerator for up to 3-4 days to use later.

Notes

  • Use ripe, fresh strawberries for the best flavor and natural sweetness.
  • You can adjust the amount of syrup and macerated strawberries according to your sweetness preference.
  • Any unsweetened non-dairy milk works well, including soy, almond, or oat milk.
  • For a dairy version, you can substitute with regular milk or cream.
  • Store leftover syrup and macerated strawberries in sealed containers in the refrigerator up to 3-4 days.
  • Adding a squeeze of lemon or lime juice helps balance the sweetness and brighten the flavor.
