Ingredients
Chicken
- 4 boneless, skinless chicken breasts
- ¼ cup olive oil
- 2 teaspoons Italian seasoning (divided)
- 1 teaspoon kosher salt (divided)
- ½ teaspoon ground black pepper (divided)
- ½ teaspoon ground paprika (divided)
- 4 tablespoons unsalted butter (divided)
- 1 lemon (sliced)
Vegetables
- 4 cups baby potatoes (sliced into ¼ inch rounds)
- 1 onion (sliced)
- 2 cloves garlic (minced)
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the packets.
- Season the chicken: Sprinkle ½ teaspoon salt, ¼ teaspoon pepper, ¼ teaspoon paprika, and 1 teaspoon Italian seasoning onto the chicken breasts evenly. Set them aside to marinate briefly.
- Prepare the potato mixture: In a large bowl, combine sliced baby potatoes, sliced onion, minced garlic, olive oil, the remaining 1 teaspoon Italian seasoning, ½ teaspoon kosher salt, ¼ teaspoon black pepper, and ¼ teaspoon paprika. Toss everything well to coat the vegetables evenly in seasoning and oil.
- Prepare foil sheets: Take 4 pieces of nonstick aluminum foil and spray the center of each piece with nonstick cooking spray to prevent sticking.
- Assemble the packets: Divide the potato mixture equally, placing a quarter of it in the center of each foil sheet. Top each portion with one seasoned chicken breast, 2-3 lemon slices, and 1 tablespoon of unsalted butter.
- Seal the packets: Fold the left and right sides of the foil over the filling so they meet in the center. Roll this fold down tightly over the contents, then roll the top and bottom edges to seal completely, ensuring no juices leak.
- Bake: Place the foil packets on a baking sheet and bake in the preheated oven for 35 minutes, or until the chicken is thoroughly cooked and the potatoes are tender when pierced with a fork.
- Serve: Carefully open the packets to release steam, garnish with fresh herbs such as parsley or thyme if desired, and serve immediately for a flavorful, comforting meal.
Notes
- You can substitute baby potatoes with fingerling potatoes or small red potatoes, sliced similarly.
- For extra zest, add some lemon zest or a splash of lemon juice inside the packets before sealing.
- If you prefer spicier food, add a pinch of red pepper flakes to the seasoning mixture.
- These foil packets can be meal-prepped and kept in the refrigerator for up to 24 hours before baking.
- Ensure packets are sealed tightly to keep the moisture and steam inside for perfectly tender chicken and vegetables.
