This vibrant Lemon Feta Chicken recipe features tender chicken cutlets marinated in lemon juice, garlic, and Greek seasoning, then pan-seared to perfection. Topped with a creamy, tangy lemon feta mixture infused with fresh herbs, it makes a quick and delicious Mediterranean-inspired meal perfect for busy weeknights.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Chicken Marinade

  • 2 pounds chicken breast (cut or pounded into thin cutlets)
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 tablespoons Greek seasoning

Cooking

  • 1 tablespoon olive oil (for cooking)

Lemon Feta Topping

  • 4 ounces feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest (from one lemon)
  • 1 tablespoon chopped fresh parsley (plus more for garnish)
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill)
  • Salt and pepper, to taste

Instructions

  1. Marinate the Chicken: Combine the chicken cutlets with 1 tablespoon of olive oil, 2 tablespoons lemon juice, minced garlic, and Greek seasoning in a bowl. Mix thoroughly to ensure each chicken piece is evenly coated with the marinade. Let it sit for a few minutes to absorb the flavors.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and add the remaining 1 tablespoon of olive oil. Once hot, place 3-4 chicken cutlets in a single layer. Sear each side for about 3 minutes, then flip and cook an additional 2-4 minutes until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove cooked cutlets and repeat with remaining pieces.
  3. Prepare the Lemon Feta Topping: In a small bowl, mix together the crumbled feta cheese, 1 tablespoon olive oil, 1 tablespoon lemon juice, lemon zest, chopped parsley, and dried dill. Mash and stir with a fork until well combined. Taste and season with salt and pepper as desired.
  4. Assemble and Serve: Return the cooked chicken cutlets to the skillet or serving dish. Spoon the lemon feta mixture evenly over the chicken and garnish with additional fresh parsley. Serve immediately while warm.

Notes

  • For best results, pound the chicken breasts to an even thickness to ensure even cooking.
  • If fresh dill is unavailable, dried dill works well as a substitute at a reduced quantity.
  • This dish pairs wonderfully with a side of roasted vegetables or a fresh Greek salad.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for food safety.
