Ingredients
Chicken and Marinade
- 6 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 lemon (zest and juice)
- 1 tablespoon smoked paprika
- 4 garlic cloves, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature ensures the chicken skin crisps beautifully while keeping the meat juicy.
- Prepare the Marinade: In a large mixing bowl, combine olive oil, lemon zest, lemon juice, smoked paprika, minced garlic, salt, and black pepper. Stir until the mixture has a deep reddish-orange color and a tangy, smoky aroma.
- Marinate the Chicken: Add the chicken thighs to the bowl and toss them until each piece is thoroughly coated with the marinade. Use your hands to massage the marinade into and under the skin for maximum flavor. For deeper taste, let the chicken marinate for 30 minutes at room temperature or up to overnight in the refrigerator.
- Arrange for Roasting: Place the marinated chicken thighs skin-side up in a cast iron skillet or sturdy baking dish. Make sure the pieces are spread out and not crowded to allow even roasting and crisping of the skin.
- Roast the Chicken: Roast the chicken in the preheated oven for 35–40 minutes. Roast until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C).
- Rest Before Serving: Remove the chicken from the oven and let it rest for 5 minutes. This step allows the juices to redistribute and ensures each bite is tender and juicy.
Notes
- Marinating overnight in the fridge enhances the flavor but is optional.
- Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) for food safety.
- Skin-on, bone-in thighs provide the best flavor and texture in this recipe.
- A cast iron skillet helps achieve even cooking and a crispy crust but a sturdy baking dish works well too.
- Serve with roasted vegetables or a fresh salad to complete the meal.
