Ingredients
Potatoes
- 3 pounds baby gold potatoes, halved or quartered as needed to be 1½- to 2-inches (Honey Gold Bite-Sized Potatoes recommended)
Seasoning & Sauce
- ⅓ cup olive oil
- ½ cup low-sodium chicken broth (or vegetable broth for vegetarian option)
- 1 lemon, zested and juiced
- 2 teaspoons dried oregano
- 1 teaspoon kosher or sea salt
- ½ teaspoon garlic powder
- Freshly ground black pepper, to taste
- 3 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it reaches the ideal temperature for roasting the potatoes evenly and creating a crispy texture.
- Prepare Potatoes: Arrange the halved or quartered baby gold potatoes in a single layer on a large rimmed baking sheet to allow proper roasting and browning on all sides.
- Mix Seasoning: In a small bowl, combine the low-sodium chicken broth (or vegetable broth), olive oil, fresh lemon juice and zest, dried oregano, kosher salt, garlic powder, and freshly ground black pepper. Stir well to blend the flavors.
- Coat Potatoes: Pour the seasoning mixture evenly over the potatoes on the baking sheet. Toss the potatoes using a spatula or your hands to ensure each piece is thoroughly coated with the flavorful blend.
- Initial Roasting: Place the baking sheet in the preheated oven and roast the potatoes for 20 minutes. This step begins cooking the potatoes through and developing a golden surface.
- Toss and Continue Roasting: Remove the baking sheet, toss the potatoes to turn and redistribute them in an even layer. Return them to the oven and roast for an additional 25 to 30 minutes, or until the potatoes become fork tender and have a crisp, golden-brown exterior.
- Garnish and Serve: Once cooked, sprinkle freshly chopped parsley over the roasted potatoes for a burst of color and freshness. Serve warm as a delicious Mediterranean side dish.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth.
- Use fresh lemon juice and zest for the best citrus flavor.
- If you prefer a stronger herb flavor, add a teaspoon of fresh oregano along with the dried oregano.
- Make sure the potatoes are cut evenly to ensure uniform cooking.
- For extra crispiness, you can broil the potatoes for the last 2-3 minutes—watch carefully to avoid burning.
