Lentil Sweet Potato Patties are a deliciously easy and healthy vegetarian recipe featuring crispy edges and a soft center. Made with simple pantry staples like lentils, sweet potatoes, and feta cheese, these patties are perfect for a nutritious weeknight dinner, meal prep, or a satisfying meatless meal anytime. Enhanced with flavorful spices and herbs, they bring an American and Mediterranean-inspired twist that’s both filling and budget-friendly.

  • Total Time: 30 minutes
  • Yield: 4 servings (approximately 12 patties)

Ingredients

Main Ingredients

  • 1 can lentils (15 oz / 400 g) or 1½ cups (230 g) cooked lentils
  • 1 medium to large sweet potato
  • ½ cup all-purpose flour
  • 1 cup crumbled feta cheese (substitute with ½ cup grated parmesan)
  • 1 large egg
  • ½ red onion, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin (or substitute with 1 teaspoon paprika)
  • ½ teaspoon salt
  • Black pepper, to taste
  • 1 tablespoon olive oil (plus more as needed for cooking)

Instructions

  1. Cook the Sweet Potato: Poke the sweet potato a few times with a fork. Microwave on high until very soft and fork-tender, about 5 to 7 minutes. Once cooked, cut it open and scoop the soft flesh into a large bowl.
  2. Mash with Lentils: Add the rinsed lentils, drained well, into the bowl with the sweet potato. Mash them together using a fork until mostly smooth, leaving a few small lumps for texture.
  3. Mix Everything Together: To the bowl, add the all-purpose flour, crumbled feta cheese, egg, finely chopped red onion, grated garlic, dried oregano, ground cumin, salt, and black pepper. Mix thoroughly until the mixture is thick and easy to scoop. If the mixture feels too wet, gradually add a bit more flour until the right consistency is reached.
  4. Cook the Patties: Heat olive oil in a pan over medium heat. Scoop about 2 tablespoons of the mixture, gently flatten it into a patty shape, and cook for 3 to 4 minutes on each side until golden brown and crispy on the edges.
  5. Serve: Serve the patties warm, accompanied by tzatziki, yogurt, or a squeeze of lemon for added freshness. Enjoy them as a main course or a satisfying vegetarian snack.

Notes

  • Ensure the sweet potato is fully cooked and soft to help bind the patties well.
  • If the mixture is too sticky, add a little more flour gradually until manageable.
  • You can substitute feta cheese with parmesan for a different flavor profile.
  • These patties can be made vegan by replacing the egg with a flax egg and using vegan cheese or omitting cheese.
  • Store cooked patties in the refrigerator for up to 3 days and reheat in a pan for best texture.
  • These patties pair well with fresh salads, yogurt dips, or wrapped in a pita bread for a light meal.
