Leprechaun Bait is a festive, colorful snack mix perfect for St. Patrick’s Day celebrations. Combining crunchy cereals, pretzels, marshmallows, and candy-coated chocolates all coated in smooth white chocolate, this sweet and salty treat is easy to make and fun to share.

  • Total Time: 25 minutes (including cooling and setting)
  • Yield: 6 servings

Ingredients

Snack Mix Ingredients

  • 2 cups Corn Chex cereal (or Rice Chex)
  • 1 cup mini pretzel twists
  • 1-1/2 cups Lucky Charms cereal
  • 1/2 cup Lucky Charms marshmallows (picked out from cereal)
  • 3/4 cup green M&M’s (or other candy-coated chocolate), divided

White Chocolate Coating

  • 1 (11-ounce) bag white chocolate chips
  • 1-1/2 teaspoons vegetable oil

Instructions

  1. Line Sheet Pan: Line a large sheet pan with parchment paper and set aside to prepare for the coated snack mix.
  2. Combine Ingredients: In a large bowl, mix together the Corn Chex cereal, mini pretzel twists, Lucky Charms cereal, Lucky Charms marshmallows, and 1/2 cup of the green M&M’s to create the base snack mix.
  3. Melt White Chocolate: Place the white chocolate chips and vegetable oil in a microwave-safe bowl. Microwave for 30 seconds, then stir. Microwave again for 25 seconds and stir until smooth and melted. If the chocolate isn’t fully melted, continue to microwave in 10-second bursts, stirring between each, until smooth.
  4. Combine White Chocolate with Mix: Pour the melted white chocolate over the snack mix and gently stir until all ingredients are thoroughly coated.
  5. Transfer to Pan and Add Toppings: Spread the coated snack mix evenly onto the prepared parchment-lined sheet pan. Sprinkle the remaining 1/4 cup of green M&M’s evenly over the top.
  6. Let Harden: Allow the snack mix to set at room temperature or place in the refrigerator for 10–20 minutes until the white chocolate hardens and firms up.
  7. Serve or Store: Once hardened, break the mixture into bite-sized pieces. Serve immediately or package into plastic bags for gifting.

Notes

  • You can substitute Rice Chex for Corn Chex if preferred.
  • If you cannot find green M&M’s, other green candy-coated chocolates will work well.
  • Be careful not to overheat the white chocolate to prevent burning—melt slowly in increments, stirring often.
  • For a firmer coating, chill the snack mix in the fridge rather than leaving it at room temperature.
  • Use parchment paper to prevent sticking and make cleanup easy.
