Lilac Honey Posset is a delicate medieval-inspired dessert featuring a creamy custard infused with the fragrant floral notes of lilac blossoms and sweetened with raw organic honey. This luscious pudding offers a unique, lightly tangy flavor from lemon juice and a smooth, velvety texture.

  • Total Time: 2 days 1 hour
  • Yield: 6 servings

Ingredients

Infusion

  • 4 cups heavy whipping cream
  • 2 cups lilac blossoms, washed and stems removed

Posset Mixture

  • 1/2 cup raw organic honey
  • 1/3 cup lemon juice
  • 1/8 tsp salt (optional)
  • 1 cup fresh lilac blossoms for second infusion

Instructions

  1. Prepare Lilac Infused Cream: Pour 4 cups of heavy whipping cream into a bowl and add 1 cup of freshly harvested and washed lilac blossoms. Cover and refrigerate overnight to allow the cream to absorb the delicate floral flavor.
  2. Strain Infused Cream: The next day, strain the lilac blossoms from the cream using a fine sieve, collecting the infused cream into a saucepan.
  3. Heat with Honey: Add 1/2 cup of raw organic honey to the infused cream and gently bring the mixture to a low boil over medium heat. Stir constantly to prevent scorching.
  4. Simmer: Once the mixture reaches a soft boil, reduce the heat to low and simmer for about 3 minutes, continuing to stir to ensure even cooking.
  5. Add Lemon and Continue Stirring: Stir in 1/3 cup of lemon juice, blending well into the cream. Keep stirring and simmer for an additional 3-5 minutes to thicken and integrate flavors.
  6. Cool and Optional Salt: Remove the saucepan from heat and let the mixture cool slightly for a few minutes. At this point, add 1/8 tsp salt if using, and stir to blend.
  7. Second Lilac Infusion: Add 1 cup of fresh lilac blossoms to the warm cream and let the flowers infuse for about 10 minutes to boost the floral aroma.
  8. Strain and Portion: Strain the blossoms out and pour the posset mixture into individual ramekins or glass jars.
  9. Set the Posset: Cover the containers tightly and refrigerate for at least 4 hours, preferably overnight, until the posset is fully set and chilled.

Notes

  • Ensure lilac blossoms are sourced from pesticide-free areas and are safe for consumption.
  • The overnight infusion gently extracts floral flavor without overpowering the posset.
  • Adjust honey quantity to taste for preferred sweetness.
  • Adding salt is optional but helps enhance the overall flavors.
  • Use fresh lemon juice for best acidity and flavor balance.
  • Posset will have a silky texture similar to custard or a soft pudding.
