Loaded Greek Feta Fries are crispy russet potato slices seasoned with oregano and topped with creamy crumbled feta cheese, fresh chopped tomatoes, red onion, and a squeeze of lemon juice. These versatile fries can be fried, baked, or air-fried to perfection, offering a delightful combination of savory, tangy, and fresh flavors perfect for a flavorful snack or appetizer.

  • Total Time: 1 hour 25 minutes
  • Yield: 4 servings

Ingredients

Potatoes and Seasoning

  • 4 medium russet potatoes (can also substitute Yukon Gold potatoes)
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano

Toppings

  • 3/4 cup feta cheese, crumbled
  • 1 large tomato, chopped
  • 1 small red onion, chopped (or 1/2 a large onion)
  • 1/2 lemon, juiced
  • Fresh parsley, for garnish (optional)

For Frying (Optional)

  • Oil for frying

Instructions

  1. Prep Potatoes: Slice the potatoes into 1/4 inch thick slices. Place them in a bowl filled with water and let them soak for 1 hour to remove excess starch, which helps achieve crispier fries.
  2. Dry Potatoes: Drain the potatoes and pat them dry thoroughly using paper towels to prevent oil splatter or soggy fries during cooking.
  3. Season Fries (if baking or air frying): In a bowl, toss the potato slices with olive oil, salt, and pepper evenly. Skip this if you plan to fry them, as seasoning will be done afterward.
  4. Cook Fries: Choose your cooking method:
    • Frying: Heat oil in a deep fryer or large dutch oven to a suitable frying temperature. Fry potatoes in batches for 7-10 minutes until golden and cooked through. Drain on paper towels and season immediately.
    • Baking: Spread fries in a single layer on parchment-lined baking sheets. Bake in a preheated oven at 425°F (220°C) for 15 minutes, flip fries, then continue baking until tender and golden.
    • Air Frying: Preheat air fryer to 375°F (190°C). Air fry the fries for 13-15 minutes, shaking the basket halfway through for even cooking.
  5. Season Fries: Transfer cooked fries to a serving platter and sprinkle the dried oregano evenly over them.
  6. Add Toppings: Generously top the fries with crumbled feta cheese, chopped tomatoes, and red onion.
  7. Add Lemon and Garnish: Squeeze fresh lemon juice over the fries and optionally garnish with fresh parsley for a light, fresh finish. Serve immediately while warm.

Notes

  • Soaking potatoes before cooking removes excess starch, resulting in crispier fries.
  • You can use russet or Yukon Gold potatoes depending on your preferred texture.
  • If frying, season fries immediately after draining to ensure the seasoning sticks well.
  • For extra crispiness when baking, make sure fries are spread out evenly and not overcrowded on the baking sheet.
  • Fresh parsley adds a nice color and fresh herbal note but is optional.
  • Adjust lemon juice amount to taste for desired tanginess.
  • These fries are best served immediately to enjoy optimal texture and flavor.
