Ingredients
Potatoes
- 2 lbs Yukon gold or russet potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon taco seasoning (optional)
Ground Beef Mixture
- 1 lb ground beef
- 1 packet (1 oz) taco seasoning
- ½ cup water
- ¼ teaspoon salt (if needed)
Toppings
- 1.5 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup pico de gallo or salsa
- 2 cups shredded lettuce
- 1 large avocado, diced
- 1 lime, cut into wedges
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (frozen or canned, drained)
- ¼ cup sliced jalapeños
- ¼ cup fresh cilantro, chopped
- Hot sauce (optional)
- Nacho cheese sauce (optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or spray it well with cooking spray to ensure the potatoes don’t stick and crisp properly.
- Prepare Potatoes: Wash and cut the potatoes into approximately 1-inch bite-sized cubes. Keep the pieces evenly sized for uniform cooking. You can peel the potatoes if preferred, but leaving the skins on adds texture and nutrition. Pat the cubes dry thoroughly so the oil adheres well.
- Season Potatoes: In a large mixing bowl, toss the potato cubes with olive oil, salt, black pepper, garlic powder, and optional taco seasoning until all pieces are evenly coated for maximum flavor.
- Roast Potatoes: Spread the seasoned potato cubes in a single layer on the prepared baking sheet, ensuring they are not overcrowded to avoid steaming. Roast in the preheated oven for 30 to 35 minutes, turning them halfway through with a spatula, until the potatoes are golden and crispy on the outside and tender inside.
- Cook Ground Beef: While potatoes roast, heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, for 8 to 10 minutes until completely browned. Drain excess grease.
- Simmer Beef with Seasoning: Return the drained beef to the skillet and add taco seasoning packet and ½ cup water. Stir and simmer for 3 to 5 minutes until the sauce thickens and coats the beef. Adjust salt to taste if necessary.
- Prepare Toppings: While beef simmers and potatoes roast, shred lettuce, dice avocado, grate cheese if needed, and prepare pico de gallo or salsa to have all toppings ready for quick assembly.
- Assemble Bowls: Divide the hot roasted potatoes evenly into 4 bowls as the base. Top each bowl with a generous portion of seasoned ground beef, then sprinkle shredded cheddar cheese to allow it to melt slightly from the heat.
- Add Fresh Toppings: Layer on shredded lettuce, pico de gallo, sour cream, diced avocado, black beans, corn, sliced jalapeños, and chopped cilantro as desired. Add hot sauce or nacho cheese sauce if you like extra flavor and heat.
- Finish with Lime: Squeeze fresh lime juice over each bowl to brighten flavors, then serve immediately, allowing everyone to customize with their favorite toppings.
Notes
- For extra crispy potatoes, do not overcrowd the baking sheet.
- Leaving potato skins on enhances texture and nutrition but can be peeled if preferred.
- Adjust taco seasoning saltiness based on the packet to avoid over-salting the beef.
- Use fresh lime juice at the end to add a vibrant, fresh flavor contrast.
- Optional toppings like hot sauce and nacho cheese sauce allow for customizable spice and creaminess.
- Prepare all toppings ahead of time to speed up assembly.
- Substitute ground turkey or chicken for a leaner protein if desired.
