Ingredients
Bisque Base
- 2½ cups lobster stock (or seafood stock; see substitutions in Note 1)
- 2 tablespoons butter
- 2 tablespoons flour
- ½ cup carrots, diced
- ½ cup celery, diced
- ½ cup onions, diced
- 2 cloves garlic, minced
- 1 ⅓ tablespoon tomato paste
- ½ cup water
- Salt and pepper to taste
- ⅓ cup heavy cream
Lobster Tails
- 2 cooked lobster tails or claws (left whole)
- 2 tablespoons butter
- Chopped chives for garnish
Instructions
- Prepare the Vegetables: Heat a large pot over medium-high heat and add 2 tablespoons butter, ½ cup diced carrots, ½ cup diced celery, and ½ cup diced onions. Sauté until fragrant and softened, about 5 minutes.
- Add Tomato Paste, Garlic and Flour: Stir in 1 ⅓ tablespoons tomato paste and 2 cloves minced garlic. Sprinkle 2 tablespoons flour over the mixture and sauté for 3 minutes until the flour coats the bottom of the pan and the mixture thickens.
- Deglaze and Simmer: Pour in ½ cup water to deglaze the pan, scraping the bottom to lift all browned bits. Allow most of the liquid to evaporate, then add 2½ cups lobster stock. Bring to a simmer and cook for 10 to 15 minutes. Turn off the heat.
- Blend the Bisque: Using an immersion blender, blend the soup until smooth and creamy. If using a regular blender, carefully vent to avoid pressure buildup from hot liquids and blend in batches if needed.
- Season and Enrich: Taste and adjust seasoning with salt and pepper. Stir in ⅓ cup heavy cream to add richness and creaminess to the bisque.
- Prepare Buttered Lobster Tails: In a pan over low heat, melt 2 tablespoons butter. Add the 2 cooked lobster tails or claws and gently coat them in butter until warmed through. Sprinkle with chopped chives, salt, and pepper.
- Serve: Ladle the bisque into serving bowls. Place each lobster tail or claw in the center of the bowl. Garnish with additional chives and a drizzle of heavy cream. Serve immediately and enjoy!
Notes
- Substitute lobster stock with seafood stock if unavailable.
- When blending hot liquids, always vent the blender lid slightly to avoid pressure buildup and burns.
- Use pre-cooked lobster tails for convenience or cook fresh lobster tails by boiling or steaming before adding to the dish.
- The bisque can be made ahead and reheated gently to preserve flavor.
- For a dairy-free option, substitute butter and heavy cream with plant-based alternatives.
