This Mango Salsa Salmon recipe combines perfectly seasoned, pan-seared salmon fillets with a fresh, vibrant mango salsa. Ready in just 25 minutes, it’s a healthy and flavorful meal that’s perfect for a quick weeknight dinner or a special occasion. The sweet and tangy salsa enhances the rich, flaky salmon, creating a delicious balance of flavors.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Salmon and Seasoning

  • 4 salmon filets
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

Mango Salsa

  • 1 large ripe mango, diced
  • ¼ cup diced red onion
  • 1 diced red bell pepper
  • 1 seeded and diced jalapeño
  • 2 tablespoons lime juice
  • 1 tablespoon fresh chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Prepare the Seasoning Mix: In a small bowl, combine 1 tablespoon brown sugar, 1 teaspoon salt, 1 teaspoon black pepper, ½ teaspoon garlic powder, and ½ teaspoon paprika. Stir well to make the seasoning mix.
  2. Make the Mango Salsa: In a large bowl, add the diced mango, ¼ cup diced red onion, diced red bell pepper, seeded and diced jalapeño, 2 tablespoons lime juice, fresh chopped cilantro, and salt and pepper to taste. Stir until all ingredients are well combined. Set aside to let flavors meld.
  3. Season the Salmon: Brush each salmon filet with 1 tablespoon lime juice. Then, rub the seasoning mix evenly over all sides of the salmon filets to coat thoroughly.
  4. Cook the Salmon: Heat 1 tablespoon olive oil in a skillet over medium-low heat. Place the seasoned salmon filets skin-side down in the skillet. Cook for 5 minutes without moving them, then gently flip and cook for another 5 minutes, or until the salmon reaches an internal temperature of 145°F and flakes easily with a fork.
  5. Serve: Remove the cooked salmon from the skillet. Spoon the prepared mango salsa generously over the top of each salmon filet. Serve immediately and enjoy.

Notes

  • Use fresh, ripe mango for the best flavor and texture in the salsa.
  • Adjust the jalapeño quantity to your preferred spice level or omit for a milder salsa.
  • Cooking times may vary slightly depending on the thickness of the salmon filets.
  • For a crispier skin, cook the salmon on medium heat and avoid flipping too often.
  • Serve with a side of steamed rice or leafy greens for a complete meal.
