Ingredients
Mushrooms and Vegetables
- 8-12 oz white button mushrooms
- 1 cup diced red bell pepper
Marinade
- ¼ cup white vinegar
- 2-3 cloves garlic, peeled and minced
- ½-¾ tsp sugar
- ½ tsp salt
- ½ tsp dried basil
- ¼ tsp dried thyme
- ¼ tsp dried oregano
- ¼ tsp black pepper
- ¼-½ tsp red pepper flakes (to taste)
- ¼ cup extra virgin olive oil
- ½ tsp Mrs. Dash Italian Medley (optional but delicious)
Instructions
- Prepare the Mushrooms: Keep smaller mushrooms whole and slice larger mushrooms into quarters to ensure even cooking and marination.
- Combine Ingredients in Pot: Place the mushrooms, white vinegar, minced garlic, sugar, salt, dried basil, thyme, oregano, black pepper, red pepper flakes, and optional Mrs. Dash Italian Medley into a medium pot.
- Simmer the Mixture: Bring the mixture to a simmer over medium heat and cook for 4-5 minutes, stirring occasionally to allow the mushrooms to absorb flavors and soften slightly.
- Add Bell Pepper and Olive Oil: Transfer the hot mushroom mixture into a heat-safe bowl or jar. Stir in the diced red bell pepper and extra virgin olive oil, mixing well to combine.
- Marinate Overnight: Let the mixture cool slightly before sealing with a lid. Place the container in the refrigerator and allow the mushrooms to marinate overnight to develop maximum flavor.
- Serve and Enjoy: Serve the marinated mushrooms chilled or at room temperature, ideally with toothpicks for easy snacking. They make a perfect appetizer or side dish.
