This skirt steak recipe features tender, flavorful beef marinated in a zesty blend of olive oil, coconut aminos, lemon juice, garlic, sea salt, and black pepper before being perfectly seared in a hot cast iron skillet. The quick cooking time ensures a juicy, delicious steak with a beautiful crust, ideal for a satisfying meal served thinly sliced against the grain.

  • Total Time: 3 hours 20 minutes
  • Yield: 4 servings

Ingredients

Marinade

  • 1/4 cup Olive oil (plus 1 tablespoon additional for searing)
  • 2 tbsp Coconut aminos (or low sodium soy sauce)
  • 2 tbsp Lemon juice
  • 4 cloves Garlic (minced)
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper

Main Ingredient

  • 1 lb Skirt steak (1/2 inch thick, cut crosswise into 2 large pieces)

Instructions

  1. Prepare the marinade: In a small bowl, whisk together the olive oil, coconut aminos or soy sauce, lemon juice, minced garlic, sea salt, and black pepper until well combined.
  2. Marinate the steak: Place the skirt steak pieces in a gallon zip lock bag and pour the marinade over them. Seal the bag and massage the marinade around to coat the meat thoroughly.
  3. Refrigerate: Leave the steak to marinate in the refrigerator for at least 3 hours, but no more than 24 hours to avoid the meat becoming mushy.
  4. Prepare for searing: Remove the steak from the marinade and discard the marinade. Pat the steak dry with paper towels to ensure a good sear.
  5. Preheat skillet: Heat a large cast iron skillet over medium-high heat until very hot; a drop of water should sizzle instantly. Add 1 tablespoon of olive oil to the pan.
  6. Sear the steak: Add the skirt steak to the hot skillet and sear each side according to your preferred doneness: 2-3 minutes per side for rare, 3-4 minutes for medium rare, 3.5-4.5 minutes for medium, 4-5 minutes for medium well, or 4.5-6 minutes for well done. Avoid moving the steak excessively to achieve a good crust. Use a meat thermometer to check internal temperature (120°F for rare up to 160°F for well done). The temperature will rise about 5°F while resting.
  7. Rest and slice: Transfer the steak to a cutting board or plate, tent loosely with foil, and let it rest for 5 minutes. Then slice thinly against the grain before serving for maximum tenderness.

Notes

  • Marinating for at least 3 hours enhances flavor and tenderness.
  • Do not exceed 24 hours of marinating to prevent mushy texture.
  • Make sure to pat the steak dry before searing to get a good crust.
  • Use a meat thermometer to ensure desired doneness.
  • Resting the steak after cooking allows juices to redistribute for juicier meat.
  • Slice thinly against the grain to maximize tenderness.
